This chili was a fun experiment that my kids gave 5 stars! Rhubarb is very popular in desserts and should make an appearance in a main dish occasionally. Serve with your favorite chili toppings, or eat on its own.

2 tablespoons extra-virgin olive oil
3 cups chopped fresh rhubarb (1/2-inch pieces)
1 onion, chopped
1 large red bell pepper, chopped
1 teaspoon sea salt
1 ½ pounds ground turkey
3 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 tablespoon white sugar
1 ½ teaspoons ground cumin
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
⅛ teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes
1 cup frozen white corn
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add rhubarb, onion, red bell pepper, and salt; cook and stir until tender, about 5 minutes. Add ground turkey and garlic and cook until turkey starts to brown, about 5 minutes.
  • Stir chili powder, cocoa powder, white sugar, cumin, cinnamon, allspice, and cayenne pepper into the pot; cook and stir for 3 minutes. Add blacks beans, diced tomatoes, and corn; mix well to combine. Bring chili to a boil, reduce heat and simmer, covered, until thickened and flavors are combined, about 30 minutes. Season with salt and black pepper.

TANGY RHUBARB SALSA



Tangy Rhubarb Salsa image

This is a recipe I came up with while trying to figure out what to do with an over-abundance of rhubarb. I'm not fond of sugary, syrupy rhubarb sauces but I love rhubarb and I love salsa, so I figured why not put them together! Just grab a bag of tortilla chips, or better yet make your own, and enjoy! Feel free to adjust ingredients to your liking. Don't like jalapenos? Don't use them. Mix and match peppers however you like, just be sure to use 3 of them. Also, I prefer Nellie and Joe's® lime juice because it's a bit more tart than regular bottled or fresh-squeezed lime juice, but if you can't find it that's fine, just use what you have.

2 cups thinly sliced rhubarb
1 small red onion, coarsely chopped
1 large green bell pepper, seeded and coarsely chopped
1 large red bell pepper, seeded and coarsely chopped
1 large yellow bell pepper, seeded and coarsely chopped
1 jalapeno pepper, seeded and coarsely chopped - or to taste
½ cup chopped fresh cilantro
3 roma (plum) tomatoes, finely diced
2 teaspoons brown sugar
5 tablespoons Key lime juice
2 teaspoons coarse salt
1 pinch garlic powder, or to taste
ground black pepper to taste

Steps:

  • Stir rhubarb into a large pot of boiling water and cook for 10 seconds. Quickly drain rhubarb and rinse with cold water until cool; transfer rhubarb to a large bowl.
  • Place red onion, green, red, and yellow bell peppers, jalapeno pepper, and cilantro into a food processor and pulse 3 or 4 times to finely chop; transfer pepper mixture to bowl with rhubarb. Stir in roma tomatoes.
  • Dissolve brown sugar in Key lime juice in a bowl; lightly stir lime juice mixture into rhubarb mixture. Sprinkle salsa with salt, garlic powder, and black pepper and stir salsa again. Refrigerate at least 3 hours to blend flavors.

SPICY RHUBARB CHUTNEY



Spicy Rhubarb Chutney image

This is a great recipe for grilled pork or chicken. The original recipe was sent to me from my Aunt Jean. I changed the recipe to include more cinnamon, jalapenos and garlic. I find this is much better-but if the heat scares you de seed the peppers.

Number Of Ingredients 15

2 cups packed brown sugar
1 1/2 cups cider vinegar
1 teaspoon ground ginger
1 teaspoon salt
1 teaspoon ground allspice
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
6 cups rhubarb, cut in 1/2 inch pieces
3 small jalapenos, with seeds minced
2 teaspoons minced ginger
3 teaspoons minced garlic
1 cup chopped onion
1 cup golden raisin

Steps:

  • In a large heavy saucepan combine the ingredients of part 1.
  • Bring to a boil and stir to dissolve sugar.
  • Add the ingredients of part 2.
  • Bring back to a boil, reduce heat and simmer until thick, stirring often, about 1-1 1/2 hours .
  • Ladle into clean hot jars leaving 1/2 inch head space and process in a boiling water bath canner for 10 minutes.
