PORK CHOPS WITH RHUBARB-CHERRY SAUCE
Try the sauce with roasted chicken or drizzled over toasted bread topped with goat cheese.

Steps:
- In a small bowl, combine cherries with vinegar and 1/4 cup hot water; let stand 10 minutes to soften.
- In a small saucepan, heat 1 teaspoon oil over medium-low heat. Add onion; cook until softened, stirring occasionally, about 10 minutes.
- To the saucepan, add cherry mixture, rhubarb, and sugar; bring to a boil. Reduce heat; simmer until rhubarb has softened, 5 to 8 minutes. Stir in nutmeg; season with salt and pepper. Remove from heat; keep warm.
- Generously season both sides of pork chops with salt and pepper. In a large skillet, heat remaining 2 tablespoons oil over medium-high heat. Cook pork (in two batches, if necessary, to avoid crowding the pan) until browned and cooked through, 3 to 4 minutes per side. Serve topped with warm sauce.
KNOTT'S BERRY FARM CHERRY RHUBARB SAUCE
This alone for me is a reason to stop by Knotts Berry Farm's Resturant and have their famous chicken dinner.I remember as a child, going there for special occasions. And I never miss a chance to stop by and eat there when we are near by. I love their Cherry Rhubarb Sauce that comes before the main meal. Try it, I know you will love it!

Steps:
- Place rhubarb into a saucepan, pour sugar over the rhubarb, and let stand for one hour.
- Add water to mixture and bring to a boil slowly, uncovered.
- Cook for 1 to 5 minutes, until your rhubard is soft.
- Cool, cover and refrigerate for several hours before servings.
- Can add a dash of whipping cream to the top if you like for that extra touch.

BRANDIED CHERRY RHUBARB SAUCE

- In a small saucepan, add the brandy, maple syrup, vanilla, rhubarb and cherries. Cover, set to medium low heat and cook for about 20 - 30 minutes, stirring occasionally, until the rhubarb falls apart and "melts" into the sauce.
- In a small cup, stir the cornstarch into a couple Tablespoons of water. Add the cornstarch mixture to the rhubarb sauce a bit at a time, stirring constantly, just until the sauce is thickened to your liking.
- Taste and add stevia or other sweetener until it's sweet enough for you.

- In a 12-inch nonstick skillet, bring 1 cup water and the butter to a boil over high heat. Add the snap peas; cover, and cook until bright green, about 2 minutes. Remove the lid; reduce the heat to medium. Continue cooking, tossing occasionally, until the peas are crisp-tender and the water has evaporated, 2 to 4 minutes. Remove from the heat. Toss with the mint and season with salt and pepper.
