RHINELANDER BEANS
Good German recipe! If you don't like sauerkraut, try this. It has lots of bacon and sugar. My DH loves this dish. (He's not German :) My ancestry is 100% German.

Steps:
- Fry bacon until crisp in a large fry pan or electric skillet and remove bacon.
- Leave drippings in pan and add vinegar, sugar, salt, pepper, onions, and cabbage; simmer covered 15 minutes.
- Crumble bacon and add to cabbage, along with beans, and mix well.
- Heat through before serving.

RHINELAND SAUERBRATEN
This is my recipe for Rhineland Sauerbraten which is different from Westphalian Sauerbraten. It's more on the mild side, rather sweet and sour than tart. Prep time doesn't include marinating time!

Steps:
- Peel and dice onion, carrot and parsnip.
- In a large pot, caramelize 1 tablespoon sugar until light brown, deglaze with vinegar and let simmer for 1 minute.
- Add vegetables, parsley and spices, simmer for 2 more minutes. Add red wine, bring to a boil and simmer about 3 minutes.
- Let cool completely.
- Put chuck roast into marinade (in an airtight container or ziplock bag) and let marinate for 5-6 days in the fridge.
- Remove meat from marinade, pat dry.
- Strain marinade and reserve both liquid and vegetables and spices.
- In a pot, heat clarified butter.
- Salt and pepper chuck roast and dust with flour.
- Sear in hot fat until nicely browned from all sides.
- Remove met from pot, set aside.
- Roast vegetables and spices in the fat for 1 minute, add 1 teaspoon brown sugar, slightly caramelize and deglaze with some marinade.
- Bring to a boil, then add remaining marinade and broth.
- Add meat and crumbled gingerbread, bring to a slow boil, let boil for about 2 hours until meat is tender.
- remove meat from pot and strain sauce through a sieve, press vegetables through the sieve and let the sauce boil for about 10 minutes.
- Add raisins, simmer for 10 more minutes. Season with salt and pepper and maybe more sugar to taste.
- Put meat back into pot, heat and serve with spaetzle or potato dumplings.
- Enjoy!
APPLEWOOD SMOKED BACON AND MAPLE CALICO BEANS
This baked beans recipe is fabulous. Thanks to the maple syrup and applewood bacon, you have a fantastic smokey/sweet flavor combination. I love that you can make this baked bean recipe in the slow cooker or bake them - it's super easy. These will be a hit with everyone!

Steps:
- 1. Empty baked beans into slow cooker.
- 2. Open all the rest of the beans into a colander and rinse with cool water, then add them to the slow cooker.
- 3. Dice bacon and cook until almost crisp, but not quite. Remove from pan to a separate plate and drain off most of fat.
- 4. While the bacon is cooking mix the last 6 ingredients in a bowl.
- 5. Add onions to bacon fat and saute until soft but not browned.
- 6. Add the brown sugar mix, the bacon and the onions to the slow cooker and stir well to combine all.
- 7. Slow cook on high for 4 hours or medium for 6. You can also make this in the oven 350 degrees for about 1 hour, stir a few times while cooking.
DER RHINELANDER LENTIL SOUP
For my 10th birthday my parents took me on a three hour drive to Der Rheinlander restaurant, in Portland, OR, for my birthday. Very big hit. This savory soup was between the fondue and the main dish. It certainly woke up the appetite, I remember wanting more of everything.

Steps:
- 1. In a large pot over medium high heat, combine the oil, bacon, carrots, onions and celery. Saute for 5 minutes, or until bacon is crisp. Stir in the flour until it's dissolved and mixture is pasty.
- 2. Slowly add the water, stirring constantly. Then add the bay leaves, salt, lentils, beef base, thyme, nutmeg, white pepper and potatoes. Stir all together well, bring just to a boil, reduce heat to low and simmer for 3 hours.
