This is one of my husband's favorite meals--he loves Reuben sandwiches! He found this recipe years ago. It makes a large meatloaf and is very filling.

Number Of Ingredients 11

1 egg, beaten
1 onion, chopped
1/4 cup sweet pickle relish
1 tablespoon Worcestershire sauce
1 cup soft rye breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs ground beef
1/4 cup thousand island dressing
1 cup sauerkraut, drained
1 cup shredded swiss cheese

Steps:

  • In a large bowl, combine first seven ingredients--mix well.
  • Crumble beef over mixture. On foil, pat meat mixture into 14 x 10 rectangle.
  • Spread with dressing, top with sauerkraut and 1/2 cup of the swiss cheese.
  • Roll up into a log lengthwise--seal the seams.
  • Place into a large baking pan.
  • Bake at 350 degrees for 50-55 minutes--near end of baking top with remaining 1/2 cup of swiss cheese and bake until melted.

1 lb ground beef
1 cup soft breadcrumbs
1/2 cup thousand island dressing
1 egg
1/2 teaspoon caraway seed
1/4 teaspoon pepper
8 ounces sauerkraut
1 ounce corned beef, chopped (from can)
1/2 cup swiss cheese, shredded

Steps:

  • Combine all ingredients except last 3 in medium bowl.
  • Press 1/2 of mixture in bottom of loaf pan.
  • Make slight indentation, lengthwise down center of meatloaf.
  • Combine all the filling mixture and put in indentation.
  • Top with remaining meat mixture, pressing to enclose filling and sealing edges.
  • Bake at 350 degrees for approximately 1 hour.
  • Let stand for 5 minutes.

Inspired by the classic Reuben sandwich, this nontraditional, healthy Reuben meatloaf recipe includes sauerkraut, Swiss cheese, dill pickles and rye breadcrumbs.

1 large yellow onion, cut into 2-inch pieces
1 large carrot, cut into 2-inch pieces
1 tablespoon extra-virgin olive oil or canola oil
2 cups sauerkraut, drained and squeezed dry
1 cup diced Swiss cheese
4 tablespoons ketchup, divided
1 tablespoon caraway seeds
¼ teaspoon salt
1 large egg, lightly beaten
¾ cup fresh breadcrumbs, preferably from Jewish rye bread (see Tip)
2 pounds lean (90% or leaner) ground beef
3 tablespoons low-fat mayonnaise
½ cup chopped dill pickles

Steps:

  • Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
  • Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes.
  • Add sauerkraut, cheese, 2 tablespoons ketchup, caraway seeds and salt to the vegetables; stir to combine. Stir in egg and breadcrumbs. Add ground beef and with clean hands gently knead the vegetable mixture into the meat; do not overmix. Pat the meat mixture into a loaf shape (about 12 by 5 inches) on the prepared baking sheet. Combine the remaining 2 tablespoons ketchup and mayonnaise in a small bowl. Spread on the loaf.
  • Bake the meatloaf until an instant-read thermometer inserted in the center registers 165 degrees F, about 45 minutes. Sprinkle with chopped pickles. Let rest for 10 minutes before slicing.

8 ounces deli-sliced corned beef
1 slice rye bread, cut into cubes
1 pound ground beef
1 large egg
1/4 cup milk
1/2 onion, grated on the large holes of a box grater
1 1/4 cups shredded Swiss cheese (about 5 ounces)
Kosher salt and freshly ground pepper
1 cup drained sauerkraut
Russian or Thousand Island dressing, for topping
Chopped fresh parsley, for topping
Potato chips and pickles, for serving

Steps:

  • Preheat the oven to 450 degrees F. Put the corned beef in a food processor and pulse until finely ground; remove to a medium bowl. Add the bread to the food processor and pulse until fine; add to the corned beef. Add the ground beef, egg, milk, onion, 3/4 cup cheese, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands and transfer to a rimmed baking sheet. Form into four 3/4-inch-thick oval patties.
  • Bake the patties until lightly browned, firm and cooked through (a thermometer inserted into the centers should register 160 degrees F), 20 to 23 minutes. Evenly top the meatloaves with the sauerkraut and remaining 1/2 cup cheese. Return to the oven and bake until the cheese is melted, about 3 minutes.
  • Transfer the meatloaves to plates and top with Russian dressing and parsley. Serve with potato chips and pickles.

REUBEN LOAF

When I make this bread, I almost always have to bake two loaves so that everyone gets a taste! It's especially good in the winter. In fact, last year when we went to a Christmas buffet at my husband's aunt's house-with a hearty soup as the main course-I took a Reuben Loaf along. It looks so pretty sliced and arranged on a platter, too. My husband and I are crop farmers with three young children. Cooking-especially baking-is one of the ways I relax, and I also enjoy sewing.

3-1/4 to 3-3/4 cup all-purpose flour, divided
1 package (1/4 ounce) quick-rise yeast
1 tablespoon sugar
1 tablespoon butter, softened
1 teaspoon salt
1 cup warm water (120° to 130°)
1/4 cup Thousand Island salad dressing
3 packages (2 ounces each) thinly sliced deli corned beef
4 ounces sliced Swiss cheese
1 can (8 ounces) sauerkraut, drained
1 large egg white, beaten
Caraway seeds

Steps:

  • In a bowl, combine 2-1/4 cups flour, yeast, sugar, butter and salt. Stir in warm water; mix until a soft dough forms. Add remaining flour if necessary. Turn out onto a lightly floured surface; knead until smooth, about 4 minutes. , On a lightly greased baking sheet, roll dough to a 14x10-in. rectangle. Spread dressing down center third of dough. Top with layers of beef, cheese and sauerkraut. Make cuts from filling to edges of dough 1 in. apart on both sides of the filling. Alternating sides, fold the strips at an angle across filling. Cover dough and let rise in a warm place for 15 minutes. , Brush with egg white and sprinkle with caraway seeds. Bake at 400° for 25 minutes or until lightly browned. Serve immediately; refrigerate leftovers.

2 (.25 ounce) packages rapid rise yeast
2 tablespoons sugar
¼ teaspoon salt
1 cup warm water (120 to 130 degrees F/50 degrees C)
¼ cup yellow mustard
2 tablespoons butter, softened
3 cups chopped cooked corned beef
6 slices Swiss cheese
1 cup sauerkraut, drained and pressed
1 egg

Steps:

  • In a large bowl, combine 1 1/2 cups flour, yeast, sugar and salt. Add warm water, mustard and butter; stir well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Cover and let rest for 10 minutes.
  • On lightly floured surface, roll dough to a 10x15 rectangle. Layer corned beef, Swiss cheese, and sauerkraut in the center third of the rectangle. 1/3 pound lean ground beef
1-1/4 cups soft rye bread crumbs
2 tablespoons Dijon mustard
1/2 cup sauerkraut, rinsed and well drained
8 slices deli corned beef (about 2 ounces), divided
3/4 cup shredded Swiss cheese, divided

Steps:

  • 1. In a small bowl, combine the egg, onion and milk. Crumble beef over mixture and mix well. Add bread crumbs; mix gently. On a piece of heavy-duty foil, pat beef mixture into an 8-in. x 6-in. rectangle. 2. Spread mustard over loaf to within 1 in. of edges. Layer with sauerkraut, six slices of corned beef and 1/2 cup Swiss cheese. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends. 3. Place meat loaf seam side down in a shallow 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Top with remaining corned beef and cheese. I've made this meatloaf for years but I didn't have it written down anywhere so I had to wait til I made it again tonight to measure the ingredients. I'm not usually a huge fan of sauerkraut but my husband likes it so I combined a couple of different recipes to come up with this.

1 1/2 lbs ground beef
1 cup rye breadcrumbs
1/2 cup Russian salad dressing or 1/2 cup thousand island dressing
1 egg
1/4 teaspoon pepper
1 (8 ounce) can sauerkraut, rinsed and drained
1/2 cup swiss cheese, shredded

Steps:

  • Combine ground beef, bread crumbs, dressing, egg and pepper.
  • Pat into approximately a 10x12 rectangle on a piece of waxed paper.
  • Top with sauerkraut and Swiss cheese, and roll up like a jelly roll.
  • Seal ends and place seam side down into a meatloaf pan.
  • Bake at 350 for 45 minutes or until done.
  • I usually sprinkle a little more cheese on top and put it back into the oven to melt it.
