EASY PIEROGI CASSEROLE {CROCK POT}



Easy Pierogi Casserole {Crock Pot} image

8 oz pkg bowtie pasta (cooked al dente)
5 potatoes (peeled and sliced)
4 cups shredded Cheddar cheese
3/4 cup butter (sliced)
3/4 cup bacon (crisply cooked and crumbled)
1 cup onion (finely chopped)
salt and pepper to taste

Steps:

  • Spray your crock pot lightly with cooking spray
  • Spread your pasta across the bottom of your crock pot
  • Layer your potatoes, cheese, butter, bacon and onion on top of your pasta
  • Cover and cook on low for 7-8 hours
  • Mix together gently and serve

2 tablespoons softened butter
1 (16.9 ounce) package frozen pierogies
½ (16 ounce) can sauerkraut, drained
¼ pound deli sliced corned beef, chopped
8 (1 ounce) slices Swiss cheese
1 cup thousand island salad dressing
½ cup rye bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with the softened butter.
  • Arrange the frozen pierogies into the prepared baking dish. Sprinkle the sauerkraut over top, then layer with the corned beef and Swiss cheese. Spread the salad dressing over the Swiss cheese, and sprinkle evenly with the bread crumbs. Wrap the dish with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove the aluminum foil, and continue baking until hot and bubbly, 10 to 20 minutes more.

Number Of Ingredients 12

One 16-ounce package cheese pierogies
2 tablespoons unsalted butter
1/2 cup sauerkraut
2 cups shredded Swiss cheese
8 ounces good corned beef, sliced into 1/4-inch-thick slices and chopped into cubes (you could also use pastrami)
1 tablespoon toasted caraway seeds
1 tablespoon minced fresh chives
18,000 Island Dressing, recipe follows
1 cup mayonnaise
2 tablespoons gochujang
2 tablespoons diced pickled jalapenos
1 teaspoon Dijon mustard

Steps:

  • Bring a pot of water to a simmer. Add the pierogies and simmer until slightly soft, 5 to 7 minutes. Drain and pat dry.
  • Preheat the oven to broil.
  • Heat a 12-inch ovensafe nonstick skillet over medium heat. Add the butter and heat until foaming. Saute the pierogies until golden brown, 4 to 5 minutes a side. Remove from the heat.
  • Evenly sprinkle a layer of the sauerkraut on top of the pierogies. Then add a layer of the Swiss and finally, an even layer of the corned beef.
  • On the lowest rack, broil the mixture in the skillet until the cheese and corned beef are golden brown and the cheese is bubbly, 2 to 3 minutes. Garnish with the caraway seeds and minced chives. Serve with a squirt of 18,000 Island Dressing.
  • Mix the mayo, gochujang, jalapenos and mustard in a small bowl.

Makes a great easy weeknight dinner and is easily a one-dish meal. I usually serve this with a side of pickled beets and/or rye bread/rolls.

16 ounces frozen pierogi (I like to use Mrs. T's brand)
4 ounces deli corned beef, sliced thin and chopped
1 cup sauerkraut, drained well
1/3 cup thousand island dressing
4 ounces swiss cheese (shredded or sliced thin)

Steps:

  • Preheat over to 425 degrees.
  • In a saucepan, bring 2 quarts of water to a boil; add pierogies and cook for about 5 minutes or until they float.
  • Drain and transfer pierogies into a greased 10 inch round baking dish.
  • Layer on top of the pierogies: corned beef, sauerkraut, dressing and end with the swiss cheese.
  • Bake for 10 minutes or until pierogies are hot and cheese melts.

  • Spread sauerkraut on top.
  • Add the corned beef. Top with thousand island dressing.
  • Top all with provolone cheese.
  • Bake at 350 deg. for 45 minutes.
