REUBEN MEATBALLS
Meet the Cook: Those who like the taste of Reuben sandwiches and sauerkraut are sure to savor these distinctive meatballs. The recipe was given to me by a good friend, Helga Stremel, who is from Germany and is a wonderful cook. -Irlana Waggoner, Hays, Kansas

Steps:
- In a bowl, combine the egg, onion, bread crumbs, parsley, salt and pepper. Stir in rice. Crumble beef over the mixture and mix well. Shape into 15 balls. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 15-20 minutes or until browned; drain., Transfer meatballs to an ungreased 13-in. x 9-in. baking dish. Arrange sauerkraut over meatballs; sprinkle with caraway seeds. Combine soup and salad dressing; spread over the top. , Cover and bake for 35-45 minutes or until meat is no longer pink. Uncover; sprinkle with Swiss cheese. Bake 10 minutes longer or until cheese is melted. Serve with rye bread if desired.

MINI MEATBALL SLIDERS

Steps:
- Combine the beef, breadcrumbs, milk, garlic, 1/2 teaspoon salt, and pepper to taste in a large bowl and knead the mixture together with your hands. Roll into heaping-tablespoon-size balls.
- Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until slightly softened, about 2 minutes; remove to a plate. Heat the remaining 1 tablespoon olive oil in the skillet over medium heat. Add the meatballs and cook, turning, until browned all over, about 1 minute. (You might have to do this in 2 batches.)
- Pour in the marinara sauce and return the onion to the skillet; gently stir. Cover and simmer 20 minutes.
- When ready to serve, split the dinner rolls and sprinkle some mozzarella on the bottom rolls. Top each with a meatball, some sauce and more mozzarella and sandwich with the top rolls.

- Preheat oven to 350 degrees. Line baking dish with parchment paper for easy clean up. Slice the rolls in half separating the top from the bottom. Place bottom in baking dish.
- Spread Thousand Island on bottom portion of the rolls. Then top with 4 slices of cheese, corned beef, dried sauerkraut and then remainder of 4 slices of cheese. Next add the top of the rolls
- Brush the top of the rolls with the melted butter. Cook in preheated oven for 20-25 minutes until tops are golden brown.

- Heat oven to 350°F.
- Remove rolls from package, but do not separate rolls. Cut block of rolls horizontally in half; spread dressing onto cut sides of rolls.
- Place bottom halves of rolls, cut sides up, in 13x9-inch pan sprayed with cooking spray; top with 4 cheese slices, meat, sauerkraut and remaining cheese slices. Cover with tops of rolls.
- Mix remaining ingredients until blended; brush onto tops of sandwiches. Cover.

EASY REUBEN MEATBALLS
These savory reuben meatballs make a fun appetizer for your next party or a tasty dish to eat while watching the big game.

- Preheat oven to 400 degrees F.
- In a food processor add the corned beef and pulse to grind the meat.
- Add the corned beef, ground beef, salt, pepper, and egg in a large bowl and mix well.
- Form the meat into meatballs. This batch made 30 meatballs for me. Keep in mind the size of the toast when making them.
- Add some oil to an oven-safe pan and brown the meatballs.
- When the meatballs are browned, sprinkle the sauerkraut over them and then top with the shredded cheese.
- Bake for 15 - 20 minutes. You may want to pop it under the broiler afterward to brown the cheese.
- Serve with mini toast and Thousand Island dressing.

These meatballs taste just like a Reuben! With a little tweaking it could also be made into a meatloaf. You can also substitute another kind of cheese if you are not a fan of swiss. Also, if you are doing low carb, you can sub parmesan cheese for the bread crumbs.

- Preheat the oven to 400 degrees F.
- Mix the beef, cheese, breadcrumbs, caraway seeds, salt, pepper, eggs and parsley in a bowl until uniform but not overworked. Scoop out a 1/4 cup of the mix and roll into a ball. Repeat to use all of the meat.
- Heat a cast-iron skillet over medium heat add the oil. Fry the first side of the meatballs, in batches if necessary, until golden and crusty, 7 to 8 minutes. Flip and place in the oven to finish cooking, until no longer pink in the middle, 10 to 15 more minutes.
- Sandwich Build: Heat the kraut in a small saucepot and mix in the 1000 island. Place a meatball on the bottom slider bun, top with the kraut/sauce mixture, top and skewer. Enjoy with all your closest and most respected friends.
