2 cups coleslaw mix
1 cup shredded carrot
2 tablespoons cider vinegar
6 tablespoons thousand island dressing
4 (8 inch) multigrain tortillas or 4 (8 inch) flour tortillas
4 leaves romaine lettuce or 4 leaves butter lettuce
8 thin slices turkey (can use combination of both) or 8 pastrami (can use combination of both)
8 thin slices swiss cheese

Steps:

  • In a bowl, toss coleslaw mix, carrots, cider vinegar and 2 tablespoons of the dressing until combined.
  • Spread each wrap with 1 tablespoon of the remaining dressing. Line each wrap with a piece of lettuce. Place 2 slices of turkey or pastrami on top of dressing in center. Place 2 slices of cheese on top of turkey. Top with about 1/3 cup of the coleslaw. Roll up burrito-style, tucking in sides.

1/4 cup thousand island dressing
12 thin slices deli corned beef
6 slices swiss cheese
12 ounces Coleslaw
4 thin slices red onions

Steps:

  • Spread tortillas with dressing.
  • Top each with 3 slices corned beef.
  • Add 1-1/2 slices cheese each.
  • Add coleslaw and onions.
  • Roll up and wrap in damp paper towel.
  • Microwave on high for 4 minutes.

This is one of my favorite comfort foods and it's so simple! My mom always serves this with Parmesan Pasta Roni. These work best with the jumbo crescent rolls, but regular size is fine.

1 (10 ounce) package of pillsbury big and flaky crescent rolls
4 slices deli ham
4 slices swiss cheese

Steps:

  • Unroll crescent rolls and divide into quarters (follow the rectangle perforations).
  • Fold ham and place in one half of each square of crescent roll. Repeat with the swiss cheese.
  • Fold over other half of crescent roll and seal.
  • Bake according to package directions.

2 lavash rectangles
2 1/2 tablespoons grainy mustard
1 pound sliced pastrami
1 cup coleslaw (about 6 ounces)
1/2 pound Swiss cheese

Steps:

  • To assemble: With a short end of a lavash facing you, spread about 2 slightly rounded teaspoons of the mustard over the entire lavash. Cover with a quarter of the pastrami, followed by the Swiss cheese and a quarter of the coleslaw, and roll the wrap away from you. Complete the wraps with the remaining ingredients. Or, if you prefer, prepare all at once, assembly -- line style. Cut in half on the bias.

1/4 cup pickle, finely chopped
1 tablespoon onion, minced
3 tablespoons low-fat mayonnaise, Best Foods Reduced Fat is best
1 tablespoon ketchup
1 drop hot sauce
garlic salt
pepper
2 low-fat flour tortillas, use La Tortilla Factory Muligrain Soft Wraps
6 ounces turkey pastrami
3/4 cup sauerkraut
2 slices fat free cheese, torn in half
cooking spray

Steps:

  • Combine all ingredients for the dressing and set aside.
  • Warm the wraps in the microwave for about 10 seconds so they don't tear when making the wraps.
  • Spread half of the dressing on each wrap- don't spread the dressing all the way to the edge. Lay down 2 half pieces of the cheese on top of the dressing, then split the saurkraut between the wraps, and finally split the turkey pastrami between the wraps. Fold one side over, then fold the bottom up, then roll the wrap as tightly as you can without tearing it.
  • Lay the wraps seam side down in the microwave and heat for 30-60 seconds on high until warmed through.
  • Preheat a nonstick pan over medium heat. Spray with cooking spray and lay the wraps in seam side down. Let them toast in the pan for about a minute on each side.
  • Enjoy!

This recipe is adapted from a Pampered Chef recipe out of their 2004 Spring / Summer "Season's Best" cookbook. The original recipe calls for iceburg lettuce, tomatoes and green bell peppers, but I have made some changes to adapt for our family's taste. This is a great base start and the combination possabilities are endless.

6 slices whole wheat sandwich wraps, I use Italian flavored or 6 slices flour tortillas
8 ounces fat free cream cheese
2 tablespoons Dijon mustard
1 tablespoon honey
2 cups fresh spinach leaves
12 slices ham
6 slices swiss cheese
12 slices bacon, pre-cooked strips
1/4 cup banana pepper ring (optional, also known as pepperochini's)

Steps:

  • Combine cream cheese, honey and mustard in a small bowl.
  • Spread cream cheese mixture onto one side of each flat bread wrap.
  • Add layer of spinach over cream cheese mixture, then layer of ham (2 slices per wrap). Press down firmly.
  • Add layer of sliced swiss cheese (1 slice per wrap), then layer with bacon (2 slices per wrap).
  • Add pepperochini's as an option.
  • Roll each wrap, then cut diagonally with a serated (bread) knife.
