Steps:
- Drain the sauerkraut in colander. Rinse the sauerkraut with water and squeeze out the extra moisture. In a small skillet, over medium heat, saute the bacon and onion until the onions become translucent. Pour the vegetable oil into a 4-quart saucepan. Add 1 quart of the sauerkraut, the caraway seeds, another 1 quart of sauerkraut, the bacon and onion mixture, the sugar, applesauce, and bay leaf. Cover and simmer on low heat for 15 to 20 minutes, stirring frequently. Transfer the sauerkraut mixture to a container and refrigerate until cool.
- Thousand Island dressing:
- Add all the ingredients to a bowl and stir to combine. Cover and refrigerate until ready to use.
- Reuben:
- Butter 2 slices of fresh rye bread and put them on the flat top grill. Put a slice of Swiss cheese to each piece of bread. Apply the desired amount of Thousand Island dressing and sauerkraut on each slice. Heat 4 ounces of thinly sliced corned beef on the flat top. Arrange the hot corned beef on top of 1 slice of bread. Transfer the bread slices to a cutting board and make a sandwich. Slice in half and serve.
REUBEN CHIPS

- Preheat the broiler element in your oven.
- Combine the mayonnaise, ketchup, mustard and vinegar in a bowl. Set aside.
- Place one-third of the potato chips in a baking dish. Layer with one-third of the cheese, sauerkraut and corned beef. Add half of the remaining chips in another layer on top, then evenly layer half of the remaining cheese, sauerkraut and corned beef. Finish with the remaining chips followed by the rest of the cheese, sauerkraut and corned beef. Broil just until the cheese melts.
- Toss the lettuce with the mayonnaise mixture and top the chips. Serve immediately.
REUBEN NACHOS
The nacho version of my all-time favorite sandwich. This is a great appetizer idea for a St. Patrick's Day party, or a delicious lunch or dinner entree to make with leftover corned beef brisket after the holiday.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix mayonnaise, ketchup, sour cream, relish, red onion, Dijon mustard, and garlic salt together in a small bowl until well blended. Set aside.
- Layer 1/2 of the tortilla chips in an even layer on a baking sheet. Top with 1 cup Swiss cheese, 1/2 cup Cheddar cheese, and 1/4 teaspoon dill. Repeat layers on top.
- Bake in the preheated oven until cheeses are melted, about 5 minutes. Remove from oven. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Top nachos evenly with corned beef and sauerkraut. Broil until heated through, 1 to 2 minutes. Top nachos with the mayonnaise sauce.
