1/8 teaspoon caraway seeds
1 small tomato, cut into thin wedges
2 tablespoons Thousand Island salad dressing
1 package (2 ounces) thinly sliced deli corned beef
1/4 cup shredded Swiss cheese
1/4 cup cubed rye bread
2 teaspoons butter, melted

Steps:

  • Place the sauerkraut in an ungreased 3-cup baking dish; sprinkle with caraway seeds. Layer with the tomato wedges, salad dressing, corned beef and Swiss cheese. Toss bread cubes and butter; sprinkle over the top. , Bake, uncovered, at 375° for 25-30 minutes or until heated through.

  • Warm potatoes slightly to soften them. Place in a bowl with sauerkraut and green onions; mix well. Spoon two-thirds into a greased 3-qt. baking dish. Cover with he corned beef and cheese. 1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed

¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

6 slices rye bread (dark or light), (divided use)
1 pound thinly sliced pastrami or corned beef, (divided use)
14.5 ounce can or jar sauerkraut, (drained well)
4 cups shredded Swiss cheese, (divided use)
2 teaspoons caraway seeds, (divided use)
1 cup chopped dill pickles
1 cup milk
3 large eggs, (beaten)
⅓ cup thousand island dressing
¼ cup yellow mustard

Steps:

  • Preheat oven to 350f degrees. Spray 11x7 baking dish with nonstick cooking spray. Take four slices of rye bread and cut them into 2-inch cubes.
  • Place remaining slices of rye bread into food processor and pulse into fine breadcrumbs and set aside.
  • Spread cubed bread into the bottom of the prepared baking dish.
  • Cover evenly with half of the pastrami.
  • Then evenly top with drained sauerkraut, chopped pickles and 1 tsp. caraway seeds.
  • Sprinkle 2 cups of shredded Swiss cheese on top of sauerkraut layer.
  • Next, top with remaining pastrami. I gently push down to help compact it all a bit.

1 loaf marbled rye bread (16 ounces, small cubed)

  • Mix all ingredients together in a large bowl. (You will want an extra large bowl for this one!)

1 cup Russian dressing (homemade or store bought both work)

Steps:

  • Line slow cooker with foil or parchment paper. If using foil, spray lightly with non-stick coating of your choice. This step is important if you want to remove your casserole from your slow cooker prior to serving. If you plan to serve directly from your slow cooker, skip this step.
  • Cover bottom of slow cooker vessel with one layer of latkes
  • Fully cover latke layer with a thick layer of corned beef
  • Spoon a layer of sauerkraut on top of corned beef
  • Lay a thick layer of Swiss cheese fully covering sauerkraut

1 large onion (minced)
3/4 tsp caraway seeds
2 1/2 c swiss cheese (shredded)
5/8 c thousand island dressing
1 lb corned beef (cooked and sliced very thin)
5 slice dark rye bread (cubed in 1-inch pieces)
1/2 c melted butter
1 tsp deli style brown mustard

  • 1. Preheat oven to 375 degrees. Butter a baking 10 inch baking dish. Put about half of the corned beef over the bottom of the baking dish.
