REUBEN CASSEROLE FOR THE MICROWAVE
This is such an easy recipe and great served as an appetizer at brunch or club. It has just the right bite. My family and friends always enjoy this recipe. You can add more or less of the sauerkraut and corned beef as you like... I have no photo of this as my camera is broken.. If you try this post a photo...

Steps:
- 1. Drain and rinse sauerkraut and place on bottom of a buttered 9x13 inch glass dish.
- 2. Place corned beef evenly crumbled on top of sauerkraut. Sprinkle cheese on top of sauerkraut.
- 3. Combine both dressings and lemon juice and spread evenly over cheese.
- 4. Top with tomato slices sprinkle with basil. .Microwave for 3 minutes or until cheese has melted. Remove from microwave and sprinkle with toasted bread crumbs. Let set for 2 to 3 minutes and serve on or with rye bread.
TRADITIONAL REUBEN CASSEROLE
This recipe was given to us by my husband's aunt. It has the same ingredients as a Reuben sandwich. If you love Reubens you should love this!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a bowl, mix the thousand island dressing, sour cream, and onion.
- Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. Spread the dressing mixture over the corned beef. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with margarine.
- Cover, and bake 15 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

- Preheat oven to 400 degrees F (200 degrees C).
- Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
- Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.
- Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

Steps:
- Heat oven to 350ºF. Grease square baking dish, 8x8x2 inches.
- Heat hot water, milk and margarine to rapid boil in 3-quart saucepan; remove from heat.
- Stir in 2 pouches Potatoes and Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Make sure the mixture is cool, or the mustard will curdle. Stir in mustard. Whip with fork until smooth.
- Spread 1 1/2 cups of the potatoes in baking dish.
- Top with corned beef.
- Spread sauerkraut over corned beef.
- Spoon remaining potatoes over top; spread gently.
- Sprinkle potatoes with cheese and caraway seed.
- Bake uncovered about 20 minutes or until cheese is golden brown.

- Place in 8 inch greased square casserole.
- Arrange corned beef over top.

- In a 13 x 9 inch baking pan sprayed with food release (ie Pam), layer first the sauerkraut, corned beef, thousand island dressing (try substituting a spicy brown mustard for the dressing), swiss cheese.

This tastes just exactly like a Reuben Sandwich but much easier! You can even make ahead and reheat or put in refrigerator and bake just before serving! This is so good!!!! Also a great potluck dish.

Steps:
- Put half of the rye bread cubes into a greased 15 x 10 Pyrex.
- Top with the sauerkraut.
- Mix the mayo and Russian dressing together and spoon half on top the sauerkraut.
- Top with 1 cup of the Swiss cheese.
- Top with the corned beef.
- Top with the rest of the Mayo/dressing mix.
- Lastly, top with the remainder of the bread cubes and the remainder of the Swiss cheese.
- Drizzle the melted butter over all.
- Cover with foil and bake at 350 degrees for 40 minutes.
- Uncover and bake an additional 10 minutes.
- Serve hot -- Enjoy!

- On a medium-size microwave-safe dinner plate, mound corned beef in 2 piles.
- Top each pile of meat with the sauerkraut.
- Micro-cook, uncovered, on 100% power (high) 3 to 4 minutes or until heated.
- Top each pile with a cheese slice.
- Cook, uncovered, on high 1 to 2 minutes more or till cheese is melted.
- Meanwhile, place toasted bread on individual plates.
- Spread one side of bread slices with salad dressing or mustard.
- To serve, use a wide spatula to transfer each mound of meat to the dressing side of 2 bread slices.
- Top with remaining bread slices, dressing-side down.
