1 (16 ounce) can sauerkraut, drained and rinsed
1 lb deli sliced corned beef, cut into strips
3/4 cup Russian salad dressing
2 cups shredded swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish.
  • Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut.
  • Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down.
  • Bake in the preheated oven for 20 minutes.
  • Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

1/3 cup butter or margarine
1 tablespoon yellow mustard
2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
1 package (6 ounces) sliced corned beef, cut into 1/2-inch pieces
1 can (14 1/2 ounces) sauerkraut , rinsed well and drained
2 cups shredded Swiss cheese (8 ounces)
4 teaspoons caraway seed, if desired
Thousand Island Dressing, if desired

Steps:

  • Heat oven to 350°F. Grease or spray 2 1/2-qt baking dish.
  • Heat water and butter to rapid boil in 3-quart saucepan; remove from heat. Stir in milk and mustard. Stir in 2 pouches potatoes just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth.
  • Spread about 3 cups of the potatoes in baking dish. Top with corned beef. Spread sauerkraut over corned beef and sprinkle with 2 teaspoons caraway seed, if desired. Spoon remaining potatoes over top; spread gently. Sprinkle potatoes with cheese and remaining caraway seed.
  • Bake uncovered about 20 minutes or until cheese is light golden brown.

16 oz. Swiss Cheese (grated)
8 oz. Sauerkraut (drained very well)
1/2 cup Dill Pickles (finely chopped)
1/2 cup Mayonnaise
1/3 cup Heavy Cream
3 Tbsp. Taco Sauce
1 Tbsp. Lemon Juice
2 tsp. Worcestershire Sauce
3 tsp. Caraway Seeds (divided)
1 tsp Paprika
1/2 tsp. Kosher Salt
1/4 tsp. Black Pepper
3 Eggs (beaten)

Steps:

  • Preheat oven to 375 degrees.
  • In a medium bowl, combine mayo, cream, taco sauce, lemon juice, Worcestershire sauce, paprika, salt, 1 teaspoon of caraway seeds, and half of the pickles. Taste and adjust spices to your preference.
  • Stir in eggs and set aside.
  • Grease casserole dish well with butter. Spread half of the chopped corned beef in the dish. Top with 1/3 of the grated Swiss cheese.
  • Spread well drained sauerkraut on top of Swiss cheese (see Recipe Notes below for tips on the sauerkraut). Top that with remaining pickles and remaining caraway seeds.
  • Add remainder of the corned beef and another 1/3 of the grated Swiss cheese.
  • Using a measuring cup or ladle, pour sauce evenly over the casserole. Add remaining Swiss cheese on top of sauce.
  • Cover with foil and bake for 40 minutes. Remove foil and broil until cheese is golden brown.
  • Allow the Keto Reuben Casserole to cool for at least 5 minutes before serving. This will help the casserole to set up.

Steps:

  • Preheat oven to 400˚F.
  • Coat a 13x9 inch baking dish with cooking spray and set aside.
  • Place the bread in a large bowl and pour the butter over top. Toss to coat.
  • Arrange half the bread in an even layer on the bottom of the baking dish.
  • Layer 1/2 the corned beef on top of the bread and top with an even layer of the sauerkraut.

  • Mix all ingredients together in a large bowl. (You will want an extra large bowl for this one!)
  • Pour everything into a 9x13 casserole dish, scraping the sides well to get all the casserole ingredients out.

1 pound thinly sliced pastrami or corned beef, (divided use)
14.5 ounce can or jar sauerkraut, (drained well)
4 cups shredded Swiss cheese, (divided use)
2 teaspoons caraway seeds, (divided use)
1 cup chopped dill pickles
1 cup milk
3 large eggs, (beaten)
⅓ cup thousand island dressing
¼ cup yellow mustard

Steps:

  • Preheat oven to 350f degrees. Spray 11x7 baking dish with nonstick cooking spray. Take four slices of rye bread and cut them into 2-inch cubes.
  • Place remaining slices of rye bread into food processor and pulse into fine breadcrumbs and set aside.
  • Spread cubed bread into the bottom of the prepared baking dish.
  • Cover evenly with half of the pastrami.
  • Then evenly top with drained sauerkraut, chopped pickles and 1 tsp. caraway seeds.
  • Sprinkle 2 cups of shredded Swiss cheese on top of sauerkraut layer.
  • Next, top with remaining pastrami. I gently push down to help compact it all a bit.
  • Sprinkle remaining 2 cups Swiss cheese and 1 tsp. caraway seeds on top of pastrami.
  • In a medium bowl, whisk together milk, eggs, thousand island dressing and mustard.
  • Pour mixture evenly over the casserole.
  • Top with breadcrumbs.
  • Cover with foil.
  • Bake for 45 minutes.
  • Remove from oven, let rest for 5 minutes then slice and serve.

1 bag sauerkraut, drained and rinsed and dry
1 lb of good deli corned beef, chipped
1 lb of good swiss cheese, sliced fairly thick
thousand island dressing (amount to your liking)
3/4 loaf of day old rye bread, cut into fairly large cubes
1/4 cup melted butter (no substitutes)

Steps:

  • In a 13 x 9 inch baking pan sprayed with food release (ie Pam), layer first the sauerkraut, corned beef, thousand island dressing (try substituting a spicy brown mustard for the dressing), swiss cheese.

6 slices dark rye bread, cubed

¼ cup margarine, melted
