REUBEN LOAF

Reuben Loaf image

When I make this bread, I almost always have to bake two loaves so that everyone gets a taste! It's especially good in the winter. In fact, last year when we went to a Christmas buffet at my husband's aunt's house-with a hearty soup as the main course-I took a Reuben Loaf along. It looks so pretty sliced and arranged on a platter, too. My husband and I are crop farmers with three young children. Cooking-especially baking-is one of the ways I relax, and I also enjoy sewing.

PASTRAMI REUBEN BREAD BOXES

Pastrami Reuben Bread Boxes image

Who knew you could go deep-dish with a Reuben? All of the classic ingredients get layered in these homemade bread boxes (like bread bowls, but square). And you can easily double the dressing recipe to serve extra on the side for dipping.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

3/4 pound thinly sliced pastrami
1 loaf unsliced white bread (preferably Pullman), about 10-inches long
6 tablespoons unsalted butter
Kosher salt
12 slices Swiss cheese
1/2 cup mayonnaise
1/4 cup ketchup
2 tablespoons horseradish, drained
1/2 teaspoon onion powder
1/2 teaspoon Worcestershire sauce
Hot sauce, for serving
1 1/2 cups sauerkraut, drained well

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F.
  • Wrap the sliced pastrami in foil and put on to a baking sheet. Remove 1/4 inch of the crust from the ends of the loaf, then cut the loaf crosswise into 4 even pieces. Use a fork to score one cut end and gently dig a square hole into each piece of bread to make a box, leaving a 1/2-inch layer of bread around the walls and bottom (see Cook's Note). Save the removed crumbs for another use.
  • Microwave the butter and a large pinch of salt in a small microwave-safe bowl until melted, about 1 minute. Brush the bread boxes inside and out with the melted butter. Put 1 slice of cheese at the bottom of each bread box. Put the boxes open-side up on the same baking sheet as the pastrami and bake until the cheese melts and the inside of the bread is lightly browned and crispy in parts, about 10 minutes. The pastrami should be warmed through.
  • Meanwhile, whisk together the mayonnaise, ketchup, horseradish, onion powder, Worcestershire sauce and hot sauce in a small bowl. Season to taste with salt if needed. Set aside.
  • Layer each bread box with 1 1/2 tablespoons of the dressing, a quarter of the pastrami, a quarter of the sauerkraut and top with 2 more slices of cheese. Return to the oven and bake until the cheese melts, about 5 minutes. Drizzle with the remaining dressing. Serve whole or cut in half.

Time 2h15m

Yield 8 serving(s)

Number Of Ingredients 18

1 cup water
1/4 cup molasses
2 tablespoons shortening
1 1/2 cups dark rye flour
1 1/4 cups all-purpose flour (approx)
1/2 cup whole wheat flour
2 tablespoons unsweetened cocoa powder
1 tablespoon caraway seed
1 tablespoon flax seed
1 1/2 teaspoons quick-rising yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons grainy mustard or 2 tablespoons Dijon mustard
6 ounces smoked meat or 6 ounces pastrami, thick slices
1 cup sauerkraut, rinsed and squeezed dry
4 ounces swiss cheese, grated
1 egg white
1 teaspoon caraway seed

Steps:

  • In small saucepan, heat together water, molasses, and shortening until at 120°F (50°C); stir together rye flour, 1/2 cup of all purpose flour, cocoa, caraway seeds, flax seeds, yeast, sugar and salt. Stir in shortening mixture. With wooden spoon, gradually stir in enough of the remaining flour to make soft dough, mixing with hands if necessary.
  • Turn dough onto lightly floured surface; knead for 8-10 minutes or until smooth and elastic. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise in warm draft-free place until doubled in bulk, 30 to 60 minutes.
  • Punch down dough; turn out onto a lightly floured surface. Roll out into 14x12-inch rectangle. Please on greased baking sheet.
  • Filling: Spread mustard lengthwise in 3" strip along center of rectangle, leaving 1" border uncovered at ends. Top with 2 layers each meat, sauerkraut, and cheese.
  • Starting at corner of dough, make diagonal cuts 1" apart almost to filling along one side of dough. Repeat on other side in opposite direction. Alternating strips from each side, fold strips over filling to resemble braid, overlapping ends by 1".
  • Glaze: Brush egg white to seal. Cover and let rise in warm draft-free place until doubled in bulk 30-40 minutes. Brush top with remaining egg white. Sprinkle with caraway seeds.
  • Bake in centre of 350°F oven for 30-40 minutes or until puffed and dark brown. Remove from pan; let cool slightly on rack. Serve warm or let cool completely.

REUBEN MEATLOAF

Reuben Meatloaf image

Inspired by the classic Reuben sandwich, this nontraditional, healthy Reuben meatloaf recipe includes sauerkraut, Swiss cheese, dill pickles and rye breadcrumbs.

Provided by EatingWell Test Kitchen

Categories     Healthy Ground Beef Recipes

Time 1h30m

Number Of Ingredients 13

1 large yellow onion, cut into 2-inch pieces
1 large carrot, cut into 2-inch pieces
1 tablespoon extra-virgin olive oil or canola oil
2 cups sauerkraut, drained and squeezed dry
1 cup diced Swiss cheese
4 tablespoons ketchup, divided
1 tablespoon caraway seeds
¼ teaspoon salt
1 large egg, lightly beaten
¾ cup fresh breadcrumbs, preferably from Jewish rye bread (see Tip)
2 pounds lean (90% or leaner) ground beef
3 tablespoons low-fat mayonnaise
½ cup chopped dill pickles

Steps:

  • Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
  • Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes.
  • Add sauerkraut, cheese, 2 tablespoons ketchup, caraway seeds and salt to the vegetables; stir to combine. Stir in egg and breadcrumbs. Add ground beef and with clean hands gently knead the vegetable mixture into the meat; do not overmix. Pat the meat mixture into a loaf shape (about 12 by 5 inches) on the prepared baking sheet. Combine the remaining 2 tablespoons ketchup and mayonnaise in a small bowl. Spread on the loaf.
  • Bake the meatloaf until an instant-read thermometer inserted in the center registers 165 degrees F, about 45 minutes. Sprinkle with chopped pickles. Let rest for 10 minutes before slicing.
