Hamburgers soup is an easy to make and delicious soup made with lean ground beef, veggies, and a richly flavored broth. It's inexpensive to make and reheats beautifully.

Number Of Ingredients 13

1 tablespoon olive oil
1 medium onion (minced)
4 cloves garlic (minced)
2 carrots (diced)
2 stalks celery (diced)
1 ½ lb lean ground beef (see notes)
4 tablespoons tomato paste
6 cups beef broth
14 ounce can diced tomatoes
1 tablespoon Italian seasoning
2 russet potatoes (about 1 ¼ lb, diced)
Optional: 1 cup frozen peas and 1 cup frozen corn
Salt and pepper (to taste)

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for about 5 minutes, until the onion is golden. Add the carrots and celery and cook for 3 minutes more.
  • Add the ground beef and cook for about 8 minutes, until it is crumbly and no longer pink.
  • Push the beef to the side of the pot and add the tomato paste. Let it cook for 2-3 minutes, until it is sweet-smelling.
  • Add the beef broth, diced tomatoes, Italian seasoning, and potatoes and bring the pot to a boil. Reduce the heat and simmer, uncovered, for 15 minutes, or until the potatoes are soft.
  • If using, add the peas and corn to the pot then season to taste with salt and pepper.

Number Of Ingredients 18

2 1/2 pounds ground chuck
3 cloves garlic, minced
2 stalks celery, diced
1 large onion, diced
3 cups beef stock or broth, plus more if needed
One 14.5-ounce can whole tomatoes
3 tablespoons tomato paste
2 teaspoons dried parsley flakes
1/2 teaspoon ground oregano
1/2 teaspoon kosher salt, or more to taste
1/2 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon cayenne pepper, or more to taste
5 red potatoes, cut into chunks
4 carrots, peeled and sliced on the diagonal
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
Crusty bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  • Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
  • Serve with crusty bread!

1 pound lean ground beef
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
6 cubes beef bouillon
5 cups water
1 (8 ounce) can tomato sauce
1 (16 ounce) can diced tomatoes
1 teaspoon salt
1 (10 ounce) package frozen corn kernels
1 teaspoon dried basil
3 tablespoons ketchup

Steps:

  • In a medium skillet, brown hamburger over medium heat. Drain off fat.
  • Combine beef, carrots, celery, onions, bouillon, water, tomato sauce, chopped tomatoes, salt, corn, basil, and ketchup in a large stock pot. Bring to a boil. Reduce heat, and simmer for at least 1 1/2 hours.

This is my favorite soup ever! It's what I make most often for myself and my daughter and it is soOo easy. During spring we use vegetables from the garden but the easiest way is just using regular canned produce. It's wonderful either way you choose.

1 pound lean ground beef
4 potatoes, peeled and cubed
1 (14.5 ounce) can sliced carrots, undrained
1 (14.5 ounce) can French style green beans, undrained
1 (15.25 ounce) can sweet corn, undrained
1 (28 ounce) can diced tomatoes
3 ½ cups water
1 (14 ounce) can tomato sauce
salt and black pepper to taste

Steps:

  • Heat a large pot over medium-high heat, and stir in the ground beef. Cook until the beef is crumbly, evenly browned, and no longer pink. Drain, and discard any excess grease.
  • Stir in the potatoes, carrots, green beans, corn, tomatoes, tomato sauce, and water. Bring the soup to a boil over high heat. Reduce heat to medium-low, cover, and simmer until the potatoes are tender, about 20 minutes. Season to taste with salt and pepper.

Don't be fooled by the title of this soup. It has wonderful flavor and is so hearty that it can be used as the main course along with some homemade bread. It is delicious. I make it a lot in the winter months when we have a lot of snow--it warms you up. You may use rice in place of the barley, or a little of both.

1 lb hamburger
5 cups water
1 (16 ounce) can tomatoes, cut up (I use petite cut)
1 onion, chopped (1 cup)
2 medium carrots, sliced (1 cup)
1/3 cup barley, rinsed
1/4 cup catsup
6 beef bouillon cubes
2 teaspoons Lawry's Seasoned Salt
1 teaspoon basil
1 dash ground pepper

Steps:

  • Brown hamburg in large pan breaking up into medium pieces.
  • Drain off excess fat.
  • Add the rest of the ingredients.
  • Bring to a boil; reduce heat and simmer covered for 1 hour or till veggies are tender.
  • If you have any leftover rice, peas, or corn, add them at the end and heat well.
  • This soup freezes well as long as there is no potato in it.

Just tested this recipe I compiled.. The taste was good. Refreshing. I cooked this for my husband and myself. I did not add potatoes so I could freeze the leftovers. Having leftovers is an added blessing for the 2 of us, however if we have a larger crowd I would add 2 cups cubed potatoes an hour (or until potatoes are fork tender) before you hare ready to serve. 0.5 (4 ounce) package onion soup mix
18 ounces chopped tomatoes
3 cups green beans, frozen
1 (8 ounce) can carrots
1 (8 ounce) can garbanzo beans
1 (4 ounce) can tomato paste
4 cups water

Steps:

  • Brown beef with Lipton onion soup mix. Crumble.
  • Add to tomatoes, and frozen green bean. Heat till green bean are loose and able to stir them.
  • rinse carrots and garbanzo beans and add to soup with 4 cups water.
  • Add pepper to taste and stir in tomato paste.
  • Simmer on med high tell done.
  • If you freeze leftovers.Thaw and heat.
