This is a fool proof guide to making your own delicious pizza dough! Soft and light, yet crispy on the bottom.

1 1/4 c (300 mL) water
1 1/2 Tbsp (20 g) olive oil
3 3/4 c (480 g) all purpose flour
1 1/2 tsp (17 g) sugar
1 1/2 tsp (8.4 g) salt
1 1/2 tsp (4.2 g) active dry yeast

Steps:

  • Place ingredients in the bread machine in the order listed above (or in the order specified by your machine), making sure to nestle the yeast in a small nest on top of the flour.
  • Place in bread machine and set the cycle to dough cycle.
  • When cycle is complete, preheat oven to 450 degrees. Roll the dough out into desired shape and thickness on a lightly floured surface.
  • Poke the dough with a fork all over and put it on the preheated pizza stone for 5 minutes. Once firm, remove from oven and top as desired.
  • Return to oven for another 5-10 minutes until dough is crisp and cooked through and cheese is bubbly.

153 grams 00 flour (1 cup plus 1 tablespoon)
153 grams all-purpose flour (1 cup plus 1 tablespoon and 2 teaspoons)
8 grams fine sea salt (1 teaspoon)
2 grams active dry yeast (3/4 teaspoon)
4 grams extra-virgin olive oil (1 teaspoon)

Steps:

  • In a large mixing bowl, combine flours and salt.
  • In a small mixing bowl, stir together 200 grams (a little less than 1 cup) lukewarm tap water, the yeast and the olive oil, then pour it into flour mixture. Knead with your hands until well combined, approximately 3 minutes, then let the mixture rest for 15 minutes.
  • Knead rested dough for 3 minutes. Cut into 2 equal pieces and shape each into a ball. Place on a heavily floured surface, cover with dampened cloth, and let rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator. (If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza.)
  • To make pizza, place each dough ball on a heavily floured surface and use your fingers to stretch it, then your hands to shape it into rounds or squares. Top and bake.

I have looked for a couple of years for a good restaurant style pizza dough recipe I could make at home. Most of the recipe's I had tried tasted like bread, not pizza dough. This is the closest I have found to a great dough recipe! Please note Recipe is by weight, you will need a scale. Measuring by weight allows exact measurement and can be duplicated perfectly each time. The recipe is based on 65%-68% hydration. Salute to Forno Bravo for the recipe.

500 g flour (High gluten pref but regular flour will work)
325 -340 g warm water (110 degrees)
10 g salt
3 g active dry yeast (I use 7 grams or 1 pckg ADY for a lighter crust)
5 g sugar (optional)

Steps:

  • Place water and sugar in mixing bowl, stir to combine and add the yeast. Allow yeast to sit until it starts to bubble 10 minutes or so. Then add the flour and salt.
  • Run mixer on low speed for 2 minutes or until combined. Then run on medium for 10 minutes.
  • Remove the dough from the bowl and form it into a ball. Place the dough in another bowl or even a gallon ziploc bag, and rub olive oil on it to keep it from drying out.
  • Let it rest for 1 1/2 hours or until double in size.
  • Preheat oven to 500 degrees.
  • Cut the dough in half for two regular pizza's or cut it into 4 pieces for thin crust pizza's.
  • Roll out the dough and place your favorite toppings on it.
  • Bake at 500 degrees for about 10-12 minutes. For a pizza with heavy or a lot of toppings, par bake the crust for about 4-5 minutes.
  • Note (I use a pizza stone and preheat the oven for atleast 30 minutes.). I hope you enjoy this recipe!

1 cup water, lukewarm
2 tablespoon extra virgin olive oil
3 cups (411 g) bread flour
1 1/4 teaspoon salt
1 teaspoon Taylor Street seasoning (optional, see note)
2 teaspoon instant yeast

Steps:

  • Add the ingredients in the order they are listed to your bread machine's bread pan fitted with the paddle attachment.
  • Select the Dough program and press "Start". Most machines take about an hour and a half to complete the cycle.
  • Brush olive oil around the inside of a large mixing bowl. Transfer the dough from the bread pan to the bowl and remove the paddle. Gently punch the dough down and turn it over in the bowl so that it is covered in the oil. Cover the bowl with plastic wrap or a clean towel.
  • If you don't want to bake with the dough today, you can place the covered bowl in the fridge and leave the dough for up to 3 days.
  • Plan to move the bowl to a warm spot in your kitchen 2 hours before you want to bake so that the dough can come to room temperature and then rise.
  • Place the covered bowl of dough on your stovetop or another warm spot in your kitchen and let the dough rise for 1 hour. (If the dough was refrigerated, add an additional hour.)
  • Place a pizza stone on a rack in the center of your oven and preheat to 450°F for at least 30 minutes.
  • Transfer the pizza dough to a baking mat. Do not flour the mat, you want the dough to stick a little bit so it is easier to pat into shape. Use a bench scraper or pizza wheel to cut the dough in half. Put one half back in the oiled bowl while you pat out the first crust.
  • Use your fingers to pat the dough into a 12-inch circle. If the dough insists on shrinking, let it rest for 5 - 10 minutes and try again.
  • Place a piece of parchment paper over the pizza crust and smooth out the air bubbles. Roll up the baking mat, flip it, and unroll the mat so the parchment paper is now on the counter and the baking mat is on top. Peel back the baking mat, you should now have the pizza crust sitting on parchment paper.
  • Brush olive oil around the edges of the crust and then top with your favorite pizza toppings.
  • Repeat with the second half of the dough.
  • To get the crispiest crust, you'll want to bake the pizza on the parchment paper directly on the hot pizza stone in the oven. For a softer crust, you can place the pizza on a metal pizza pan and bake it on the hot stone.
  • To get the pizza onto the hot stone without spilling, it is a good idea to slide the pizza on the parchment to a metal pan and use it as a "pizza peel" to carry it to the oven. Rest one edge of the pan on the hot stone and carefully slide the parchment off the pan and onto the stone.
  • Bake the pizza for 12 - 15 minutes or until the edges are golden brown and your toppings have melted and are gently bubbling.
  • To remove the pizza from the stone, use a metal pan and slide the parchment off the stone onto the pan.

  • Unplug your bread machine and remove the bread pan.
  • Place the water, olive oil and then the rest of the ingredients into the bread pan. Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
  • Place the bread pan (with ingredients) into the bread machine and then plug in the machine.
  • Put your machine on the Dough setting and press the start button. In our Sunbeam bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
  • When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts (as the bread pan/bread machine may be hot). Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
  • Preheat oven to 400 degrees.
  • Shape the pizza dough into a round pizza shape. Don't press down on the edges of the pizza. You want a little rim around the pizza. The higher edges will help to contain the sauce and cheese as the pizza bakes.
  • The pizza dough can be used to create one large pizza or two small/medium pizzas.
  • Place the pizza-shaped dough on a non-stick baking sheet or pizza pan.
  • Spread a thin layer of tomato sauce (or pizza sauce) on the pizza dough.
  • Sprinkle on a layer of shredded cheese.
  • Add some already cooked toppings (i.e. fried Italian sausages). These toppings should be pre-cooked because the pizza baking process may not cook them properly or safely.
  • Bake pizza in the oven at 400 degrees for 18-22 minutes or until crust is golden brown. Baking time will vary due to the amount & variety of toppings and size & depth of the pizza dough. Check the pizza frequently after 15 minutes to ensure that it has been baked to perfection!
  • Wear oven mitts to remove pizza from the oven.
  • Place finished pizza on cutting board and cut into pizza slices. Enjoy!
