CRISPY RESTAURANT STYLE BUFFALO CHICKEN WINGS

Crispy Restaurant Style Buffalo Chicken Wings image

Regardless of how you dress your wings, the key to making amazing wings is to fry them twice. I love them tossed in the dry seasoning rub listed below, since they maintain their crunchy flavor! I never understood those who chose to oven-bake their wings; it's called a guilty pleasure for a reason! You can also season the wings with an Asian soy, BBQ, herb or traditional buffalo-style hot sauce. Serve immediately along side celery and ranch or blue cheese dressing, if desired!

Yield 6

Number Of Ingredients 12

2 tablespoons ground paprika
1 tablespoon ground black pepper
1 tablespoon chili powder
1 tablespoon seasoned salt
2 teaspoons cayenne pepper
1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
1 teaspoon ground white pepper
1 teaspoon mustard powder
2 pounds chicken wings
2 cups vegetable oil, or as needed
2 cups peanut oil, or as needed

Steps:

  • Mix paprika, black pepper, chili powder, seasoned salt, cayenne pepper, onion powder, garlic powder, white pepper, and mustard powder together in a bowl until seasoning mix is evenly combined. Dry chicken wings thoroughly with a paper towel.
  • Heat enough vegetable oil and peanut oil in a deep cast iron pot or heavy pot to reach a depth of about 2 inches; bring to 300 degrees F (150 degrees C).
  • Split wings into 2 batches and fry each batch in the hot oil, 4 to 5 minutes. Transfer each batch to a paper towel-lined plate to drain.
  • Increase oil temperature to 350 degrees F (175 degrees C). Fry each batch of wings in the hot oil until skin is crispy, golden brown and meat is no longer pink in the center, 5 to 6 minutes. Drain wings on a paper towel-lined plate; transfer to a bowl.
  • Sprinkle seasoning mix over cooked wings and toss to evenly coat.

RESTAURANT-STYLE BUFFALO CHICKEN WINGS

Restaurant-Style Buffalo Chicken Wings image

If you are a lover spicy food and buffalo wings then you might want to give this recipe a try, you may of coarse double or triple this recipe but because of the spices and cayenne you will need to make each recipe in a separate bowl (10 wings in each bowl) the amount of cayenne may be adjusted to suit heat level, plan ahead the coated wings *must* be refrigerated 2 hours before frying, this is important so do not skip ;-) Serve the wings with a blue cheese dip see recipe#181552 or use your own favorite recipe

Provided by Kittencalrecipezazz

Categories     Chicken

Time 2h15m

Yield 10 wings

Number Of Ingredients 13

1/4 cup butter
1/4 cup Frank's red hot sauce (original flavor, or use your own favorite brand hot sauce)
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 pinch salt (or to taste)
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon seasoning salt
10 chicken wings
oil, for deep-frying

Steps:

  • For the sauce; in a small saucepan combine the butter, hot sauce, black pepper, salt and 1/2 teaspoon garlic powder; bring to a simmer over medium-low heat.
  • Reduce heat to low and simmer uncovered for about 20 minutes stirring occasionally; remove from heat and set aside to be coated with the wings later.
  • For the wings; in a bowl combine flour, paprika, cayenne (you may adjust cayenne to suit heat level) 1/2 teaspoon garlic powder, onion powder and seasoned salt.
  • Place the wings in a shallow dish and sprinkle the flour mixture over; mix using hands to coat evenly and completely (I use disposable rubber gloves for this!).
  • Cover the dish and refrigerate for 2 hours (THIS IS IMPORTANT, the wings must be refrigerated for that amount of time!).
  • Heat oil in a deep-fryer to 375 degrees F (the oil should be just enough to cover the wings completely, about 1-1/2-inches or more).
  • Fry the flour-coated wings in hot oil for about 10-15 minutes or until parts of the wings begin to turn brown.
  • Remove from heat then place wings in a serving bowl; add in prepared hot sauce mixture and turn the wings to coat with the sauce.
  • You may serve the wings as is or place on a baking sheet and bake in a 250 degree oven for 10 minutes.
  • Serve with a blue cheese dip.

  • In a bowl, whisk together the flour, potato starch, garlic, paprika, onion, salt and pepper, set aside.
  • Dredge the each wing well in the flour mixture and set aside on a plate for about 15 minutes. In the meantime add enough oil to a heavy bottomed skillet with high sides to come half way up the sides of the pan, preheat it to 330 degrees.
  • Working in batches, cook the wings at that temperature (make sure the temperature of the oil stays around 325-330 the whole time) for about 3 minutes on each side (at this point they will be quite blonde in color and not crispy yet so don’t panic) remove them to a paper towel lined plate and once you’re all done, increase the heat to 375 degrees.
  • Working in batches once again, now start frying the wings at that high temperature for a few minutes on each side or until deeply golden brown and crispy, in the meantime, add the hot sauce, garlic, Worcestershire and butter in a small saucepan and cook it on really low while you cook the wings.
