  • Add all ingredients (except optional corn and beans) to the canister of a blender or food processor in the order listed. Pulse or blend on high power until texture is as smooth as desired. If you have a very strong blender, you probably don’t need to pre-chop the ingredients before adding them to the blender, but I do just to make sure I don’t get large random, accidentally unblended chunks of any one ingredient.
  • Transfer to airtight container and serve immediately with chips. However, I prefer to refrigerate salsa for 1 day prior to serving because I prefer chilled salsa and because the flavors marry, mellow, and the flavor improves on the second and third day. Salsa will likely keep up to 1 week airtight in the fridge; however, we’ve always eaten a batch within 3 days.

  • If you desire a spicy salsa, add a few jalapeño seeds at a time, blending after each addition, until desired taste is reached.

  • Roughly chop the tomatoes and place half of them into the blender. Roughly chop the onion and jalapeno and add to blender with the garlic. Then add the remaining chopped tomatoes, the cilantro, salt and black pepper if using. Begin by pulsing the ingredients until they blender gets going – if you’re tomatoes are not ripe enough you’ll need to add a couple of tablespoons of water to get the blades going. Once you have enough liquid at the bottom you can blend at low speed until the salsa is nice and smooth.
  • Taste and if needed add more salt. Pour into a serving container or store in the fridge, covered, until ready to serve. Please notice this salsa won’t keep more than a day or max too in the fridge. It’s really best to enjoy within 30 minutes of blending. Also do note that the longer it sits the darker the red tone will become.

  • Prepare the homemade salsa ingredients by cutting the tomatoes into quarters, if using ripe fresh tomatoes. Canned tomatoes can be used whole.
  • Chop the onion and garlic. De-stem and dice jalapeños; remove seeds and white ribs for desired heat level. Keep in mind that you can always add more heat, but salvaging too hot salsa requires more creativity. So keep seeds/ribs to side and blend in later, if you want more heat.
  • Pick the leaves off the cilantro sprigs. You can add the leaves whole but the stems won't blend up as well, so chop them finely.
  • Add all ingredients to a high speed blender and pulse until the salsa reaches desired consistency. You can blend the salsa until it is completely smooth or leave it a little chunky, like I do.
