RESEMBLES LITTLE HOUSE ON THE PRAIRIE GINGER TEA
I read it in a Little House on the Prairie book somewhere. Idon't use measurements--by the cup or by the quart. I used it as a tea at Girl Scout da ycamp first and it was good.

Steps:
- Put a sprinkle of ginger into the water.
- Heat in the microwave or stovetop until the ginger releases its flavor into the water. You can tell by tasting it and smelling it.
- Add vinegar and then stir.
- Add honey to taste.
- It is nice and not like anything we drink today that I know of.
- Serve hot or cold.

KOREAN GINGER TEA
From koreanrecipes.org.If spicy is not your thing,don't boil it for that long.Just a little simmer to get it just the way you like it.Koreans eat very spicy food so I'm not surprised by boiling it for 25-30 minutes.Even though I love hot food,for me even the 15 minutes was too much.I suggest to taste it and turn off the heat when is suites your taste.

Steps:
- Clean the ginger well
- Rinse the cinnamon in cold water.
- Thin slice the ginger.
- Put the ginger, cinnamon, and water into a pot.
- Boil it on medium (or low) heat for about 25-30 minutes.
- Sieve the ginger and cinnamon. (Use a white straining cloth if you can, to catch the small dirt from the cinnamon).
- Serve it in a tea cup. (You can also add some pine nuts and honey).
CINNAMON CHICKEN
Every time I hear the words "Cinnamon Chicken" I am reminded of the tv series Little House on the Prairie and the famous episode where Nellie asks Laura to help her cook Almanzo's favorite meal. Laura is jealous of Nellie and replaces the cinnamon with tons of black pepper. Anyway, here is a recipe I clipped from a magazine a long time ago that brings the image of what that dish might have tasted like(if Laura had not tampered with it lol). This was adapted from a magazine clipping.

Steps:
- Combine juice, honey, lemon juice, garlic, seasonings in a large ziptop container.
- Add chicken pieces, seal bag, shake to coat well and let marinade in the refrigerator for 8 hours or overnight.
- Heat oven to 350°F and have ready a large roasting pan, 9" x 13".
- Remove chicken from the marinade, shake off the excess and set chicken aside on a plate.
- Pour marinade into a small saucepan and bring to a boil, reduce heat to medium and boil until it has reduced to 1 cup and has begun to thicken (about 10-15 minutes).
- Heat oil in a skillet and brown chicken parts over fairly high heat just a few minutes per side, lowering heat if needed to prevent from charring- you want the chicken to be evenly browned, but not fully cooked yet.
- Place chicken in the roasting pan and pour the reduced marinade on top.
- Bake 30-55 minutes, or until chicken is fully cooked and no no longer pink (will vary based on the chicken pieces you use).
- Skim fat from the pan juices and serve juices as a dipping sauce if you like.
- Garnish with lemon wedges.

- Combine the milk, tea and sugar in a small saucepan and bring to a boil.
- Wash a thumb-sized piece of fresh ginger. Pound until flat - juice should begin to ooze.
- Add the ginger to the milk-tea mixture when it begins to boil.
- Reduce the heat, letting it all simmer for 2-3 minutes.

FRIED CHICKEN (LITTLE HOUSE ON THE PRAIRIE)
This is from the Little House on the Prarie cookbook. It is an old recipe but very good. I actually like it better cold the next day than fresh. If you are looking for one with a heavy batter or KFC style, this isn't for you. I have no idea if my cooking time is accurate...

Steps:
- Place chicken pieces in a large bowl and sprinkle with vinegar and salt.
- Cover with cold water and set aside (I put it in the fridge) for 30 minutes to 1 hour.
- After 30 minutes (or so) heat the oil in a frying pan (I use a cast iron skillet) over medium/high heat. Let the oil come up 1/4 to 1/2 way up the sides of the pan.
- Drain chicken and, one at a time, coat with flour.
- Fry the chicken in hot oil until brown on all sides.
- You can either finish the chicken in oven or lower the heat, so it doesn't burn, and cook the chicken through in the pan.

GINGER CITRUS TEA
I already had a recipe for extremely spicy ginger tea, but I was craving something a bit milder this time. So, I constructed a tea out of dried ginger pieces, dried orange peel and dried lemon peel. I've seen tons of recipes similar to this that require fresh lemon/orange juice/ginger but this recipe would be perfect for someone who only keeps the dried stuff on hand (like me!). P.S. - I've listed things as teaspoons, but technically it's in a ratio such that you can make whatever quantity you want.
