1 can whole black olives (- try some different varieties from the olive bar at your local grocer's)
1 can green olives
2 to 3 jars assorted pickles (- vary the choices from dill to sweet to spicy, maybe throw in some itty bitty cornichons, too)
1 bunch radishes ( or sliced turnip)
4 carrots (cut into sticks the old fashioned way if you wanna go retro)
1 head celery (cut into sticks)
1 jar pickled or roasted peppers

Steps:

  • Prepare the vegetables as necessary.
  • Arrange the various ingredients on a tray. Use a pretty, divided dish.

10 oz hot cherry peppers
1 cup marinated mushrooms
8 oz pickled green beans
8 oz pickled carrots
4 oz cornichons or sweet gherkins
8 oz pickled okra
2 cups boiled peanuts

Steps:

  • Drain all of the marinated or pickled ingredients and arrange on relish trays.
  • Serve immediately or cover and store in the refrigerator until ready to serve.

1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 teaspoon sugar
1 1/2 pounds cooked medium shrimp
1/4 cup sliced caper berries, plus whole caper berries for serving
1/3 cup mayonnaise
1/4 teaspoon grated garlic
4 ribs celery, cut crosswise into 2-inch pieces
Simple Crostini

Steps:

  • Whisk together lemon juice, oil, 1 teaspoon salt, 1/4 teaspoon pepper, and sugar. Stir in shrimp and caper berries. Refrigerate, stirring occasionally, at least 1 hour.
  • Meanwhile, stir together mayonnaise and garlic. Refrigerate until ready to use. Use a mandolin or a sharp knive to cut celery lengthwise into thin planks. Serve shrimp with garlic mayonnaise, shaved celery, crostini, and whole caper berries.

1/4 cup olive oil
3 tablespoons sherry vinegar
1 teaspoon chili powder
1 tablespoon chopped fresh parsley leaves
Salt and pepper
1 large fennel bulb
1 pint cherry tomatoes
1/2 pound salami, sliced
1 can pitted black olives, drained
1 jar (5 ounces) pimiento-stuffed Spanish olives, drained
1 jar (12 ounces) baby kosher dill pickles, drained
1 jar pickled onions, drained
2 jars (6.5 ounces each) marinated artichoke hearts
1 jar (7.5 ounces) pepperoncini
1 tin (2 ounces) anchovies with capers
1 box artisan crackers or loaf of Italian bread

Steps:

  • In a bowl, whisk together the olive oil. sherry vinegar, chili powder and parsley and toss to coat. Season with salt and pepper, to taste.
  • Slice fennel into wedges and wash cherry tomatoes. Roll salami slices into batons.
  • Drain all jarred ingredients well. Arrange all items as desired on a large platter. Serve slightly chilled or at room temperature with bread and/or crackers.

30 ounces canned baby corn
16 ounces giardiniera
16 ounces pickled onions

Steps:

  • Drain all of the ingredients well and spread them out on paper toweling to remove any excess brine or liquid. Arrange the different ingredients in any desired pattern on a large platter, grouping the items together. Serve immediately or cover with plastic wrap and refrigerate for up to 4 hours. You can refrigerate it longer but you will probably have to drain off additional liquid after that time.
