REINDEER WURST IN LENTIL SOUP

Steps:
- Heat the olive oil over medium heat in a large saucepan and brown sausage for 5 or 10 minutes to allow the meat to firm up. Remove to a utility platter until cool enough to handle.
- To the same pan add onion, garlic and thyme leaves and saute until the onion becomes translucent. Stir in 8 cups water and 1 tablespoon balsamic vinegar. Add carrots and lentils, bring to a boil, reduce heat and simmer for about 30 minutes until the lentils begin to soften.
- While the lentils are cooking, slice the sausage into 1/4-inch slices. Add them to the pot of lentils and simmer until the meat is cooked through, about 15 more minutes. Season soup with salt and pepper, to taste. Serve drizzled with extra-virgin olive oil.
LENTIL SOUP
Steps:
- Melt butter over medium-high heat in a large stockpot or Dutch oven. Saute onions with salt until deep brown, about 10 minutes. Reduce heat to low and add garlic, ginger, and pepper. Cook until aromas are released, stirring constantly, about 2 minutes. Add lentils and cook an additional 3 minutes, constantly stirring so the beans are evenly cooked.
- Add chicken stock, bring to a boil, reduce to a simmer, and cook, uncovered, about 1 hour 15 minutes. Stir soup regularly to ensure even cooking so the beans do not burn. When done, beans should be soft inside, with no chalkiness. Serve immediately, garnished with a dollop of yogurt.
CARRABBA'S SAUSAGE AND LENTIL SOUP
I've gone to Carrabas many times just for this soup. A lady from my supper club happened to bring this in for our soup theme and it tasted exactly like Carrabas! I've substituted Italian turkey many times and you would never notice the difference. You might also want to sprinkle some fresh basil and Parmesan cheese on top. Its good with a crusty piece of bread!

Steps:
- Brown sausage; drain off fat.
- In a large pot combine all ingredients bring to boil.
- Reduce heat,cover.
- Simmer for about 1 hour or until lentils are tender. Add water if necessary, for desired consistency. I like to puree about 1 cup of the soup and add back to pot to give it a thicker consistency.
- Sprinkle with Parmesan cheese and serve.

Steps:
- Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
- Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.

Steps:
- In a large slow cooker, combine all the ingredients except for the creme fraiche.
- Cover and cook on LOW for 6-8 hours or until the lentils are tender.
- Discard the bay leaf.
- Remove the bratwurst and cut it into slices.
- Stir the slices into the soup; taste for seasoning and adjust.
- Serve the soup hot, topping each bowl with a dollop of creme fraiche.
