Easy Refrigerator Pickles image

This easy refrigerator pickles recipe is a great way to use cucumbers and onions from the garden. Here in Upstate New York, we have an abundance of cucumbers. -Catherine Seibold, Elma, New York

Yield 6 cups.

Number Of Ingredients 9

6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

Number Of Ingredients 6

4 pounds cucumbers (about 6 large), cut into 1/4-inch slices
3 medium onions, cut into 1/8-inch slices
3 cups sugar
3 cups cider vinegar
4 teaspoons canning/pickling salt
1-1/2 teaspoons mustard seed

Steps:

  • In a large container, combine cucumbers and onions. In a large bowl, combine the remaining ingredients, stirring until sugar is dissolved. , Pour over cucumber mixture; mix well. Cover and refrigerate overnight. May be refrigerated for up to 2 weeks.

7 cup(s) cucumbers, kirby, sliced
1 cup(s) onion, sliced
1 tablespoon(s) salt
2 cup(s) sugar
1 cup(s) white vinegar
1/2 cup(s) water
1 teaspoon(s) celery seed
1 bunch(es) dill, fresh
3-4 clove(s) garlic

Steps:

  • In a large bowl combine cucumbers, onion and salt. Cover and let stand for 1 hour.
  • In a saucepan combine sugar, vinegar, water and celery seed. Allow to come to a boil and simmer until sugar is dissolved. Allow to cool.
  • Drain cucumbers well. Pour cooled sugar mixture over cucumbers. Add dill and garlic.
  • Refrigerate for 1-2 days. Place in sterile jars. Store refrigerated.

1 cup distilled white vinegar
1 tablespoon salt
2 cups white sugar
6 cups sliced cucumbers
1 cup sliced onions
1 cup sliced green bell peppers

Steps:

  • In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
  • Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.

I got this recipe from an old family friend. She used to make us these pickles when we were kids. It is a really simple recipe, and the hardest part is not eating the pickles before they are ready. You can add pimentos, sliced bell peppers, or whole garlic cloves to the vinegar solution as alternative options.

7 cups thinly sliced cucumbers
1 cup bell pepper, green, thinly sliced
1 cup thinly sliced onion
1 tablespoon celery seed
2 tablespoons salt
1 cup sugar
1 cup vinegar

Steps:

  • Combine cucumbers, green/red pepper, onion, celery seed and salt in bowl; mix well.
  • Stir sugar into vinegar in small bowl until dissolved.
  • Pour over vegetables.
  • Chill, covered, in refrigerator overnight.
  • May store in refrigerator for 2 weeks.
  • (An optional first step is to mix the cuke slices with salt and allow the water to drain out for an hour. If this is done, it may be necessary to add an additional 2 tsps. of salt after draining. Using red peppers makes this a colorful dish).
