GRAPE CHICKEN SALAD



Grape Chicken Salad image

This salad can be served as a sandwich or as a salad. I've used it to stuff cucumbers with as well. It is always a crowd pleaser and incredibly easy to make.

1 (10 ounce) can white chunky cooked chicken breasts
1 cup mayonnaise (add 1/2 cup for creamier salad)
2 tablespoons Dijon mustard
1/8 cup white sugar
1 cup red grapes, cut in half
3 -4 celery ribs, washed and finely chopped
1 stalk green onion, finely chopped
1/4 cup sliced water chestnuts
1/2 cup shredded carrot (optional)

Steps:

  • Open and drain can of chicken, empty into 2 quart bowl and seperate chunks with a fork.
  • add grapes, celery, onion, water chestnuts, and sugar.
  • Next add mayo and dijon mustard and throughly mixed ingredients until evenly coated. Salt and Pepper to taste.

Refreshing Lemon Grape Chicken Salad image

I love rotisserie chicken and use it quite often to speed things up when cooking for my family. This is a very nice main dish salad.

2 (6 ounce) containers lemon yogurt (about 1 1/4 c.)
2 tablespoons fresh squeezed lemon juice
2 tablespoons finely chopped mint
1 pinch salt
2 cups bite-size chunks rotisserie chicken, skin removed
1 cup bite-size chunks cantaloupe
1/2 cup red seedless grapes, cut in half lengthwise
1/2 cup green seedless grape, cut in half lengthwise
1/3 cup chopped red bell pepper
1/3 cup slivered almonds, toasted
3 cups baby spinach leaves

Steps:

  • To make the dressing: mix together all the dressing ingredients in a bowl.
  • To make the salad; combine the first 6 salad ingredients in the bowl with the dressing; stir to mix well; season if needed with salt and pepper.
  • Arrange spinach leaves on individual plates.
  • Serve salad mixture on top of the spinach leaves.
  • Note: You may chill salad mixture a couple of hours before serving if desired.

  • Make the lemongrass paste. Thinly slice the tender white parts of the lemongrass stalks and place in the food processor. ( You do need to slice it first, otherwise, it will be stringy.) You should have roughly 1/2 cup. Add the garlic cloves and rough-chopped shallot. Pulse repeatedly until lemongrass gets broken down. Add oil, soy sauce, salt, sugar and Five-spice and optional chili garlic sauce and process into a paste, scraping down sides as needed. Process for a couple of minutes, until lemongrass is really chopped up finely and it looks like a paste. See photo.
  • Coat all sides of the chicken with the paste. You can do this ahead and refrigerate up to 48 hours. Or grill right away.
  • Oil the grill well. Grill chicken over medium-high, or medium heat, until deep grill marks appear, 3-4 minutes. The grill marks help naturally release the chicken from the grill, so wait for them. Do not move chicken around too much or you will lose the lemongrass. I like to use a thin metal spatula to flip. Then cook 3 more minutes, check for grill marks, then lower heat way down, cover with lid, and cook all the way through. You can also finish in a 350 F oven, uncovered.
