Avocado, strawberries and shrimp are wonderful together in this filling yet light salad. Balsamic or raspberry vinaigrette dressings go well with the salad, as do Asian-inspired dressings. -Taste of Home Test Kitchen, Milwaukee, Wisconsin

1 package (5 ounces) spring mix salad greens
1 pound cooked medium shrimp, peeled and deveined
1 large navel orange, peeled and sectioned
1 medium ripe avocado, peeled and chopped
1 cup fresh strawberries, quartered
1/2 cup thinly sliced green onions
Salad dressing of your choice

Steps:

  • On each of 4 serving plates, arrange salad greens, shrimp, orange, avocado, strawberries and onions. Drizzle with dressing.

I've been making some quick meals for my parents, while my mom is on the mend. I had some shrimp I needed to use up, so I used what I had in my fridge and it turned out delicious! It would be awesome served on a croissant as well, just chop up the shrimp. They are going to love this salad! Enjoy!

1/4 cup(s) each - mayonnaise & miracle whip
1/4 cup(s) red onion, small chopped
1 teaspoon(s) dried dill weed
1 teaspoon(s) lemon juice
a few - grinds sea salt & fresh black pepper
1 - baby cucumber, peeled and diced small - about 1/4 cup - if using a larger sized cucumber, remove the seeds
1 medium stalk celery - sliced
1 cup(s) medium - large, already cooked shrimp ~ tails removed
Lettuce - of your choice to serve it over

Steps:

  • Place all ingredients in a small bowl and mix well.
  • Stir in the shrimp and toss to evenly coat.
  • Serve over a bed of lettuce. Delicious! Could also chop the shrimp and this would be delicious served on a croissant.
