BISCOTTI DI VINO - RED WINE BISCUITS

These little biscuits are an interesting twist on baking powder biscuits. They are great served with a cream cheese spread and black caviar. This recipe is from the August 1989 issue of Gourmet Magazine.

Number Of Ingredients 7

2 1/2 cups all-purpose flour
1/3 cup sugar
1 teaspoon sea salt
1 1/2 teaspoons fresh ground black pepper (use a very coarse grind of pepper)
1 1/2 teaspoons double-acting baking powder
1/2 cup dry red wine
1/2 cup vegetable oil

Steps:

  • Preheat oven to 350°F
  • In a food processor blend together the flour, sugar, salt, black pepper and the baking powder, add the wine and the oil and blend the mixture until it just forms a dough.
  • Divide the dough into 24 pieces, roll each piece into a 3 inch-long log, and press the ends of each log together to form a ring.
  • Arrange the rings of dough 1 1/2 inches apart on ungreased baking sheets and bake them in batches in the middle of the preheated oven for 20 to 25 minutes or until the bottoms of the biscuits are turning golden.
  • Transfer the biscuits to a rack and let them cool for 5 minutes.

An authentic recipe for Italian Wine Biscuits originating from the region of Naples. This popular finger food is easy to make and so addictive.

Number Of Ingredients 11

4¼-4½ cups flour (605-640 grams)
2 teaspoon baking powder
pinch salt
3 eggs
1 cup sugar
1/2 cup vegetable oil
1 cup white wine
flour (extra flour for rolling)
raw sugar (for sprinkling tops)
1 egg
1 tablespoon milk or water (for brushing)

Steps:

  • Preheat the oven to 350℉ (175°C). Position rack to middle.
  • Line 2 baking sheets with parchment paper.
  • In a medium mixing bowl, sift together flour, baking powder and salt. Set aside.
  • In a large mixing bowl or the bowl of an electric mixer fitted with the whisk attachment, whisk the eggs until nice and frothy (about 3-4 minutes).
  • Slowly add sugar. Whisk for approximately 2 minutes.
  • Add the oil and wine and whisk for 30 seconds.
  • Switch to the paddle attachment of mixer.
  • Slowly add the flour mixture until well combined, dough will be soft.
  • Scoop dough with medium sized cookie scoop and drop on a lightly floured surface.
  • Roll into a 5-6 inch strand about 1/2 inch in diameter.
  • Shape into a ring and press lightly to combine both ends.
  • Place on parchment-lined baking sheets.
  • Brush with egg wash glaze. Sprinkle tops with raw sugar.
  • Bake for 30 minutes or until bottoms are lightly browned and tops are golden brown.
  • Allow to cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.

2 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon black pepper
1 1/4 cups red wine
3/4 cup olive oil
1 egg white, beaten
1 tablespoon sesame seeds

Steps:

  • Mix together sugar, flour, baking powder, salt and pepper in a large bowl. Add red wine and olive oil. Mix until smooth.
  • Divide dough in half and shape two logs, 10 inches long and 3 inches wide. Brush the tops with egg and sprinkle with seseame seeds.
  • Bake in preheated oven at 350F for 30 minutes. Let cool for 10 minutes. Slice each log into 1/2 inch slices with a serrated knife.
  • Turn off the oven, and place slices back on baking sheet. Let them crisp up in the oven as it cools.
