DELIGHTFUL (LOW-FAT) CRANBERRY MUFFINS



Delightful (Low-Fat) Cranberry Muffins image

This recipe comes from the Dr. Cookie cookbook which turns original recipes into great-tasting healthier ones. These cranberry muffins are especially tasty.

Number Of Ingredients 9

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 large egg
1 cup sugar
2 tablespoons margarine, melted
1 cup orange juice
1 teaspoon orange rind, chopped
1 1/4 cups fresh cranberries, halved or 1 1/4 cups frozen cranberries, thawed

Steps:

  • Preheat oven to 400.
  • Coat a 12-muffin tin with nonstick cooking spray.
  • Whisk the flour with the baking powder and salt and set aside.
  • Beat the egg, sugar and margarine with an electric mixer set on medium until smooth.
  • Add the orange juice and orange peel and beat again.
  • Mix the flour and cranberries into the batter by hand just until combined.
  • Spoon the batter into the muffin cups so that each is about two-thirds full.
  • Bake for 15 to 20 minutes our until the muffins are lightly browned, puff up and a toothpick inserted in the center comes out clean.
  • Cool in the tin set on a wire rack for about 10 minutes.
  • Remove the muffins from the tin and eat them warm or let them cool completely on wire rack.

Cappuccino Muffins with Chocolate and Cranberries image

Modified from a recipe in a coffeehouse series mystery. You may add a frosting or glaze, but these are sweet enough on their own.

2 cups sifted all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
½ cup cocoa powder
½ teaspoon salt
½ cup semisweet chocolate chips
½ cup dried cranberries
1 teaspoon minced orange zest
½ cup butter, softened
½ cup white sugar
½ cup brown sugar
1 cup sour cream
¾ cup milk
2 eggs
2 tablespoons instant coffee granules
¼ cup water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
  • Gently stir flour, baking powder, baking soda, cocoa powder, salt, chocolate chips, dried cranberries, and orange zest in a bowl until thoroughly combined. Beat butter, white sugar, brown sugar, sour cream, milk, and eggs with an electric mixer on medium speed in a separate large mixing bowl until blended.
  • Gently stir flour mixture into the liquid ingredients just until batter is moistened and smooth. Dissolve coffee granules in water in a small bowl and stir coffee mixture into the batter. Spoon batter into prepared muffin cups, filling them about 3/4 full.
  • Bake in the preheated oven until lightly browned and a toothpick inserted into the middle of a muffin, 20 to 25 minutes.

1 cup fat-free (skim) milk
1/4 cup vegetable oil
1 tablespoon grated orange peel
1/4 cup fat-free cholesterol-free egg product or 2 egg whites
1 cup Gold Medal™ all-purpose flour
1 cup Gold Medal™ whole wheat flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup fresh or frozen cranberries, chopped
Additional sugar, if desired

Steps:

  • Heat oven to 400°F. Spray medium muffin cups, 2 1/2x1 1/4 inches, with cooking spray, or line with paper baking cups.
  • Beat milk, oil, orange peel and egg product in large bowl with spoon. Stir in flours, 1/3 cup sugar, the baking powder and salt just until flour is moistened (batter will be lumpy). Fold in cranberries.
  • Divide batter evenly among muffin cups (cups will be full). Sprinkle with additional sugar. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 cup sugar
1 pinch salt
1 1/2 cups all-bran cereal
1 egg
1 cup skim milk
1/4 cup vegetable oil
1 cup blueberries (fresh or frozen)
3/4 cup cranberries, halved (fresh or frozen)

Steps:

  • Preheat oven to 400 degrees F.
  • Line muffin tray with baking cups.
  • Put bran cereal and milk in a bowl.
  • Let sit for 3-5 minutes.
  • Once cereal is softened add egg and oil.
  • Mix well.
  • Add flour, sugar, baking powder, and salt.
  • Stir until combined.
  • Add blueberries and cranberries.
  • Put batter in muffin pan cups place in preheated oven and bake approximately 20 minutes or until golden.
