Granny Smith apples mingle with tart cranberries in this reduced-sugar apple pie topped with a spiced oat streusel that tastes like winter is coming.

1 ½ cups all-purpose flour
1 tablespoon Sugar In The Raw®
1 tablespoon Stevia In The Raw®
¼ teaspoon fine sea salt
10 tablespoons cold unsalted butter, cut into small cubes
Ice water
3 large Granny Smith apples, cored and sliced 1/2-inch thick
1 ½ cups raw cranberries
⅓ cup Sugar In The Raw®
⅓ cup Stevia In The Raw®
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon sea salt
⅓ cup all-purpose flour
2 tablespoons all-purpose flour
⅓ cup old-fashioned rolled oats
3 tablespoons Sugar In The Raw®
2 tablespoons Stevia In The Raw®
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon fine sea salt
5 tablespoons unsalted butter, softened
1 large egg, beaten

Steps:

  • In a large bowl, combine flour, sugar, stevia, and salt. Add butter and rub into flour with your fingers until all pieces are flattened and broken up into pieces ranging from pea-sized to nickel-sized. Add ice water gradually, stirring frequently, until mixture is moistened enough to hold together when pressed in your hand; it should not be sticky or crumbly and dry.
  • Transfer dough to a countertop, knead briefly just to bring it together, then flatten into a disk and wrap tightly in plastic wrap. Refrigerate for at least 2 hours and up to 2 days.
  • On a lightly floured countertop, roll out dough into a 12-inch round. Transfer to a 9-inch pie dish, pressing it gently into bottom of dish. Trim all but a 1-inch overhang of dough, then fold overhang back underneath itself so a thick rim of dough rests on the rim of the pie dish.
  • Crimp the crust rim by pressing on one side with your thumb and on the other side with your thumb and index finger. Refrigerate crust while you prepare filling and streusel.
  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss together apples, cranberries, sugar, stevia, flour, cinnamon, and salt. Scrape mixture into crust and return to refrigerator.
  • In a medium bowl, stir to combine 1/3 cup plus 2 tablespoons flour, oats, sugar, stevia, cinnamon, nutmeg, cloves, and salt. Rub in butter until completely incorporated and mixture is crumbly.
  • Sprinkle streusel over pie. Place pie dish on a large baking sheet and brush crust rim with beaten egg. Bake until browned and bubbling, about 1 hour.
  • Let pie cool completely at room temperature before serving.

1 cup pastry flour
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon baking powder
1 cup plus 1 tablespoon butter flavored shortening, chilled
1/3 cup ice cold water
1 tablespoon vinegar
1 egg, beaten
4 cups apples (Rome or Jonathan), peeled and sliced
2 tablespoons butter
2 teaspoons lemon juice
1/2 cup sugar
1 tablespoon tapioca
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
1 teaspoon vanilla extract
1/4 tablespoon heavy cream
1 (27-ounce) jar mincemeat (recommended: None Such Classic or Original)
1 egg white, slightly beaten
1 tablespoon sugar
Pastry cut-outs or dollops of whipped topping

Steps:

  • Preheat oven to 450 degrees F.
  • For the pie crusts:
  • In a large bowl, combine the flours, salt, sugar and baking powder. Cut in shortening with a pastry blender until the mixture resembles cornmeal. In small bowl, mix water and vinegar with the beaten egg. Add the liquid mixture 1 tablespoon at a time to the flour mixture, tossing with a fork to form a soft dough. Shape into 3 disks. Wrap in plastic wrap and chill in refrigerator. Use 2 disks when making this pie. Freeze remaining dough for later use. Roll out 1 disk and place into a 9-inch pie dish for bottom crust.
  • For the apple filling: Combine the apples, butter and lemon juice in a saucepan over medium heat and cook for about 8 minutes. Cool slightly.
  • In a medium bowl combine the sugar, tapioca, cinnamon, nutmeg and salt. Add slightly cooled apples and mix well. Stir in vanilla and cream. Place apple mixture into bottom of pie crust, spreading evenly.
  • Spread the mincemeat on top of apple filling. Roll out another dough disk and adjust over the filling. Flute edge and vent top. Brush with egg white and sprinkle with sugar.
  • Bake for 15 minutes and then reduce oven temperature to 350 degrees F and bake for 30 to 35 minutes longer, or until golden. Garnish, as desired, with baked pastry cut outs or whipped topping.

Steps:

  • Heat oven to 375 degrees F. Lightly spray 8- or 9-inch glass pie plate with nonstick cooking spray.
  • In medium bowl, combine oats, flour, brown sugar and baking soda. Add melted butter; mix well.
  • Set aside 3/4 cup oat mixture for topping.
  • Press remaining oat mixture firmly onto bottom and sides of pie plate.
  • Bake 10 to 12 minutes or until light golden brown. Cool slightly on wire rack.
  • Using same bowl, stir together pie filling, cranberries, lemon juice and cinnamon.
  • Spoon filling over hot crust, spreading evenly. Sprinkle reserved oat topping evenly over filling.
  • Bake 18 to 22 minutes or until topping is golden brown.
  • Serve warm or at room temperature.

2 pounds tart pink baking apples (such as Pink Lady®) - peeled, cored, and sliced
1 pound Granny Smith apples - peeled, cored, and sliced
1 ½ cups fresh cranberries
1 cup firmly packed brown sugar
¼ cup all-purpose flour
2 Meyer lemons, zested
1 ¼ teaspoons ground cinnamon
¼ teaspoon freshly grated nutmeg
1 teaspoon vanilla extract
1 pie dough for a double-crust pie
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine pink apples, Granny Smith apples, cranberries, brown sugar, flour, lemon zest, cinnamon, nutmeg, and vanilla together in a bowl and stir until apples are completely coated.
  • Roll out and line a pie dish with 1/2 the dough. Pour apple mixture into pie dish. Dot apple mixture with butter pieces. Roll out remaining 1/2 the dough and top apple mixture with dough. Pinch edges of bottom and top crusts together. Tuck in dough and crimp to form a border. Cut vents in the top of the dough and place pie on a baking sheet.
  • Bake pie in the preheated oven until apples are tender, filling is bubbling, and crust is golden brown, about 50 minutes. Transfer to a wire rack to cool.
