NO SUGAR ADDED BANANA BREAD
Steps:
- Preheat your oven to 325 and prep a loaf pan for nonstick.
- In a medium sized bowl, whisk together your flour, baking soda, and baking powder. Set this bowl aside.
- Next, in a mixing bowl, cream together the sugar alternative and the butter. Then stir in the beaten eggs and the vanilla extract. Next, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. When this is blended, you can fold in the bananas and optional chopped nuts.
- Bake your bread for 65-70 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan.

- Mix mashed bananas and sugar until the sugar has dissolved.
- Beat eggs and add to bananas, blending well.
- Sift dry ingredients and mix in with banana mixture.
- If desired fold in nuts or chocolate chips.
- Pour into greased 9x5 loaf pan and bake at 325 degrees for ~50 minute.

- Preheat oven to 350°F. Spray 9x5x3-inch loaf pan with non-stick spray. Whisk together the flour, Truvia, sugar, baking powder, baking soda and salt in a large bowl. Set aside. Mix the mashed bananas, buttermilk, egg, butter and vanilla in a medium bowl. Lightly fold the banana mixture into the dry ingredients until just combined. The batter will be thick and chunky. Don't over-mix or your loaf small and tough. Scrap the batter into the loaf pan. Bake about 55 minutes until golden brown and a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes; transfer to wire rack.

- Mix in butter, eggs and Truvia®. You can use an electric mixer or stand mixer. Keep in mind that the stevia is much sweeter than regular sugar so you don't need as much of it.
