Healthy Greek Yogurt Lemon Blueberry Bread image

Healthy lemon blueberry bread is moist and fluffy and packed with flavor. This lightened up lemon bread contains NO SUGAR, NO BUTTER, and can be made with whole wheat or gluten-free flour.

1 ¾ whole wheat flour + 1 teaspoon to coat the berries
1/2 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup plain Greek yogurt (at room temperature)
½ cup maple syrup
⅓ cup coconut oil (melted)
2 eggs (at room temperature)
1 tablespoon fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 cup fresh blueberries

Steps:

  • Preheat oven to 350F. Grease and flour a loaf pan and set aside.
  • In a medium bowl combine the dry ingredients together; flour, baking powder, baking soda, and salt.
  • In a large bowl combine the wet ingredients; whisk the Greek yogurt, maple syrup, coconut oil, eggs, lemon juice and zest, and vanilla.
  • Gently fold in the dry ingredients to the wet ingredients.
  • In a small bowl with a teaspoon of flour coat the blueberries and toss it. Fold the blueberries into the batter.
  • Pour batter into the greased loaf pan and bake 45-50 minutes or until a toothpick inserted comes out clean. Cool for at least 10 minutes before slicing.

butter flavored cooking spray. (i'll use any brand except pam, it's gross)
1 cup(s) all purpose flour
1 cup(s) whole wheat white flour
1 tablespoon(s) baking powder
1 teaspoon(s) salt
1/2 cup(s) sugar
zest - from 1 whole lemon
1 cup(s) skim milk
2 large eggs
1/4 cup(s) unsweetened applesauce
1-2 cup(s) fresh or frozen blueberries
OPTIONAL GLAZE
2 tablespoon(s) fresh squeezed lemon juice
1/2 cup(s) powdered sugar (adjust to your perfect consistency if needed)
1 dash(es) lemon extract ( a couple of drops)

Steps:

  • Preheat oven to 350 degrees. Spray an 8x5 loaf pan genrously with butter flavored cooking spray.
  • In a large mixing bowl, sift together flours, sugar, baking powder and salt.
  • Zest a whole lemon into a medium mixing bowl. Add, applesauce, eggs, milk and whisk together until combined.
  • Add to dry mix along with fresh or frozen blueberries. Stir with a spatual until just combined.
  • Bake at 350 for 1 hour. Let cool for 10 minutes in pan, then turn out onto a rack to cool completely.
  • For the Glaze. Combine all ingredients lemon juice, lemon extract and powdred sugar in a small mixing bowl and beat with an electric mixer. Add more sugar or liquid as needed to reach desired consistency.
  • I serve the glaze on the side with a spoon if anyone wants it. Or skip the glaze all together to keep the calories lower.

1/3 cup butter, melted
1 cup sugar
3 tablespoons lemon juice
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
2 tablespoons grated lemon zest
GLAZE:
2 tablespoons lemon juice
1/4 cup sugar

Steps:

  • In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. Fold in the blueberries, nuts and lemon zest. , Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. , Combine glaze ingredients; drizzle over warm bread. Cool completely.
