MEATLOAF RECIPE
Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Steps:
- Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
- Glaze: Mix together in a small bowl. Set aside.
- Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
- Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
- Transfer into loaf tin. Brush generously with glaze, using about 1/2.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
- Bake for a further 30 minutes. Remove from oven.
- Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
- Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

Steps:
- Preheat oven to 400°F. Combine half of the tomato sauce, brown sugar and parsley in small bowl; set aside.
- Mix beef, eggs, bread crumbs, salt, pepper and remaining tomato sauce in medium bowl; blend well. Form into 8 oval loaves. Place in 13x9-inch baking dish.
- Bake, uncovered, 15 minutes. Drain. Spoon remaining sauce mixture over meat loaves; bake 5 minutes more. Let stand 5 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

- Preheat your oven to 350 degrees. Prepare a loaf pan (9x5) with nonstick cooking spray and set aside.
- In a large mixing bowl add ground beef, finely minced onion, eggs, bread crumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and 1/2 cup of ketchup. Gently mix with hands and then add to loaf pan.
- Mix remaining 1/4 cup of ketchup with brown sugar and mustard. Add this to the top of your meatloaf. Allow to bake for 1 hour and 15-30 minutes or until your meatloaf if cooked through. Allow to cool and settle for several minutes then slice and serve.

REDNECK MEATLOAF
I love a good meatloaf. What Redneck doesn't? The key to a good meatloaf, though is to get the right seasonings, the quality of the meat, and the right binding. Some put vegetables like carrots or other stuff in their meatloaf to trick their kids into eating healthier. A Redneck kid can sniff a veggie out from forty paces and will refuse to eat it. This does not apply to the mixed peas and mashed potatoes thing. This is a favorite recipe of mine. Haven't got a clue where it came from, nor does it matter. It satisfies this Redneck's palate. - Slip your hands into plastic sandwich bags. This will make clean-up sooo much easier!
- In a large bowl, combine the meat, crumbled and mushed up well, the chopped onion, green pepper, saltine crumbs, 1/3 cup steak sauce, eggs, pepper, salt, and half the can of tomato sauce.
- Mush this all together (this is where I take out my aggressions). Place in a loaf pan lined with the new release foil. This stuff will save you more time on clean-up. While meatloaf bakes, stir together remaining tomato sauce and steak sauce.
- Another tip: If you would rather, pat these out into mini-loaves. If you use a 9x13 pan, you could probably get 4-5 loaves, depending on how big you make them. Kids love their own meatloaf on their plate.
- Bake in a 350 degree oven for 45-50 minutes (if making one loaf, less is mini-loaves). Pour off the grease. Coat top with sauce. Bake 10 more minutes.
- Let stand a few minutes to cool down.

- Heat the olive oil over medium heat. Add onion and cook until translucent, stirring occasionally. Once softened, add garlic and cook for another 30 seconds, just until fragrant. Remove from heat and scrape the mixture into a large mixing bowl. Let cool slightly.

- In a large bowl, combine onion, milk, ketchup, Worcestershire Sauce, kosher salt, black pepper, red pepper flakes, parsley and eggs (add steak sauce now, if using). Mix well.
