MACARONI AND CHEESE CASSEROLE
I like to create recipes, and this is one my husband really enjoys. It's an excellent dish for company, especially for families with small children. After all, what kid doesn't like macaroni and cheese?

Steps:
- In a saucepan, heat milk over medium heat until bubbles form around the edge of pan. Remove from the heat; stir in the cheese and butter. Let stand for 1 minute. Stir until cheese is almost melted. Stir in bread crumbs. In a bowl, combine the macaroni, egg yolks, pimientos, parsley, onion and salt. Stir in cheese mixture; mix well. Beat egg whites until stiff peaks form; fold into macaroni mixture. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until puffed and lightly browned.

- 1. Preheat oven to 375°. Cook macaroni according to directions, drain and set aside.
- 2. In large bowl mix cream of mushroom soup w/ 1/2 cup milk.
- 3. Save some grated cheese for the top. Except Ritz crackers, macaroni, and cheese for top, add all other ingredients. Mix well by hand.
- 4. Add cooked macaroni.
- 5. Lightly stir until all macaroni is coated.
- 6. Pour into 9 x 13 casserole dish.
- 7. Sprinkle remaining cheese on top.
- 8. Add Ritz cracker crumbs if you wish. (Makes it really good!)
- 9. Cook at 375° till it bubbles about 25-35 minutes.
MAC N CHEESE
This is a Southern style Mac N Cheese!

- Beat egg,cube cheese,and add all ingredients into the cooked Macaroni,minus 1 cup on colby jack cheese,place in appropiate size cassarole dish and top with 1 cup of colby jack cheese. Bake on 350 until edges are brown.
BAKED TOMATO MAC N CHEESE CASSEROLE
Kids and adults will find this mac-n-cheese recipe to be delicious and a bit different. Tomatoes give the sauce a slight pinkish color and a flavor that is hard to top.

- Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
- Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. Slowly stream half-and-half and chicken broth into the butter mixture while stirring. Bring the mixture to a boil and continue to cook while stirring continually until thickened and bubbly, 2 to 3 minutes.
- Remove saucepan from heat. Melt mild Cheddar cheese and sharp Cheddar cheese into the butter mixture one handful at a time, stirring to incorporate each addition before adding the next. Season the cheese mixture with pepper and pour over the macaroni; stir to coat pasta evenly. Transfer the mixture to the prepared baking dish and top with crushed crackers.
- Bake in preheated oven until crust is golden brown and the liquid is bubbling, 15 to 20 minutes. Cool 10 minutes before serving.

BREAKFAST MAC AND CHEESE
Who says you can't have mac and cheese for breakfast? This Breakfast Mac and Cheese is full of sausage and has a crumbled biscuit topping.

- Preheat oven to 375 degrees and bring a large pot of salted water to a boil. Cook pasta to al dente and drain.
- In a large pan, cook sausage, crumbling it with a wooden spoon as it cooks. Once no longer pink, remove it to a bowl with a slotted spoon and set aside.
- Add onion, red pepper, and jalapeno to grease in pan and cook until softened, about 4 to 5 minutes.Stir in the garlic salt.
- Spoon onion mixture into bowl with sausage.
- Add the butter to the pan and melt over medium heat. Whisk in flour and cook for 2 minutes, stirring constantly. Gradually whisk in milk. Bring to a boil and simmer for 2 to 3 minutes, until thickened. Turn heat off and add 2/3 of the cheese. Stir until melted. Season to taste with salt and pepper.
- Add pasta, and reserved sausage/onion mixture. Stir until evenly mixed. Pour into a buttered casserole dish or cast iron pan.
- In a medium bowl, whisk the eggs together and then stir in the remaining cheese plus the crumbled biscuits. Pour this mixture on top of the mac and cheese.
- Place in oven for 25 to 30 minutes.
