1 pound beef stew meat, cut into pieces, like top round
1 tablespoon steak seasoning
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
3 cloves garlic, chopped
1 14.5 ounce can fire roasted tomatoes
1 teaspoon dried rosemary
2 teaspoons dried parsley
2 teaspoons paprika
1 1/4 cups red wine
salt and pepper, to taste
cooked noodles
cooked rice
buttermilk mashed potatoes

Steps:

  • Preheat oven to 350°F. In a large bowl, season the meat with steak seasoning and sprinkle the flour over it. Mix it so that the meat is lightly dusted with flour. Heat the olive oil in a large French oven on medium heat. Brown the meat for a few minutes while stirring well then reserve on a bowl or plate. Add the onions, carrots, celery and garlic to the pot. Cook for about 5 minutes or until vegetables start to wilt. Add tomatoes, rosemary, parsley, paprika and red wine. Turn the heat up to high and add the browned meat to the French oven. Bring liquid to a boil and cover with a lid. Place in oven and cook for about 90 minutes or until meat is fork tender. Season with salt and pepper to taste. Serve over noodles, rice or mashed potatoes.

Used to share a flat for 6 months with an hungarian, and this recipe is pretty much the way he did it, still love it.

Number Of Ingredients 14

2 -3 lbs stewing beef, cut into cubes
1/2 cup bacon, cut into small pieces
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons sweet Hungarian paprika
1 tablespoon caraway seed (less if you like)
1 bay leaf
1 -2 green peppers or 1 -2 red pepper, in 1 inch pieces
1 1/2 cups beef stock (or water with stock cubes see stock cubes info on package)
1 1/2 cups of a dry red wine (the more flavour the better, if I don't have wine I increase the stock amount and add a bit of vineg)
3 -4 cloves garlic, minced or in cut in small pieces
1 big onion, cut small
some sour cream, if you like it creamier (optional)
1/2 teaspoon hot paprika, if you like it hot (optional)

Steps:

  • fry bacon pieces in a deep pan for some minutes until the fat comes out.
  • brown beef in bacon fat with the bacon, stirring.
  • add onion and garlic cloves and brown, stirring.
  • add pepper pieces and paprika and stir.
  • add all other ingredients and cook covered on low heat for 1 1/2-2 hours or until tender Add more water if needed or if it is too thin take the cover off and evaporate the surplus water.
  • Take out bay leaf and add sour cream if you prefer it.
  • Serve with buttered noodles or with some bread dumplings.

ITALIAN STYLE BEEF GOULASH WITH GNOCCHI



Italian Style Beef Goulash with Gnocchi image

Beef cubes cooked low and slow on the stove-top until fork tender, in a rich tomato and paprika sauce.

1 1/2 lbs beef (cut into 1-inch-ish cubes (650g))
1 lb onions (yellow and/or red onion, peeled, halved and sliced (400g))
1-2 Tbsp Olive oil (for cooking onions)
1 Tbsp water
1 Tbsp all-purpose flour
1 Bay leaf
1/2 tsp dried thyme leaves (or 1/4 tsp plus a couple of fresh thyme sprigs)
1/4 tsp dried oregano leaves
1/4 tsp rosemary
1/2 cup tomato paste ((100ml))
1 Tbsp paprika (sweet, preferably Hungarian)
3 cups hot water
Salt and pepper (to taste)

Steps:

  • Heat olive oil in a Dutch oven or other large, heavy-bottomed pot over medium heat. Add onions and 1 Tbsp water. Cook onions, stirring regularly until nicely softened and opaque, but not browned, about 4-5 minutes. Add the beef cubes and a sprinkling of salt and cook with the onion, stirring and rotating the beef cubes so they cook on each side, about 10 minutes.
  • Add the paprika and flour and stir in, cooking for about 1 minute. Add the tomato paste, bay leaf, thyme, oregano and rosemary to the pot and stir just to combine. Pour hot water over the meat and onion mixture, just until the water covers the meat. You may not need all of the 3 cups of water or you may need a bit more. Season the pot with a bit more salt and some freshly ground pepper and stir.
  • Reduce heat to just a bit above low (or what ever setting maintains a gentle simmer. DO NOT COVER POT with lid, but you can set a lid askew over the top, so moisture can escape, but spatters and heat is contained a bit. Simmer for about 3 hours, checking and stirring periodically and adding additional hot water as needed to keep the mixture moist. Generally adding 1/4-1/2 cups of water a couple of times, but only if needed and as needed. As the cooking time nears the end, add only enough water to keep the sauce loose, but not so much that it will thin the lovely, thicker sauce that is forming. The best strategy at the end part of cooking is to add less water, but add it more regularly (every 5-10 minutes). Watch closely during the last part of cooking to make sure the mixture doesn't dry too much and scorch.
  • Taste sauce and add additional salt and pepper, as needed. Serve warm with cooked potato gnocchi, over polenta or pasta. Garnish with some grated Parmesan, if you like.

With fall-apart beef, tomatoes and peppers in a creamy, rich stew, our slow-cooker goulash recipe couldn't be easier or more comforting

3 tbsp olive oil
2kg braising or stewing steak, cut into chunks
2 large onions, finely chopped
4 mixed peppers, cut into 4cm chunks
3 garlic cloves, crushed
2 tbsp flour
2 tsp caraway seeds
2 tsp hot smoked paprika
1 tbsp sweet smoked paprika, plus extra to serve
4 tbsp tomato purée
4 large tomatoes cut into small chunks
400-500ml beef stock
300ml soured cream
small bunch of parsley, chopped

Steps:

  • Heat the slow cooker to low and heat 2 tbsp oil in a deep frying pan over a medium heat. Season and sear the beef in batches until brown on all sides. Transfer to a plate.
  • Put the remaining oil in the pan and fry the onions for 10 mins until lightly golden. Add the peppers and garlic, and fry for another 5-10 mins, then stir in the flour and all of the spices. Cook for 2 mins more, then stir in the tomato purée, tomatoes and 400ml beef stock. Season well. Bring the mixture to a simmer, then tip into the slow cooker with the seared beef. Add the remaining stock, if needed, to cover the meat completely. Cover and cook for 6-7 hrs until the beef is tender and the sauce has thickened slightly.
  • Season to taste, then swirl the soured cream and most of the parsley through the stew. Scatter over the remaining parsley and some sweet smoked paprika, then serve with small roasted potatoes or brown rice, if you like.

4 tbsp olive oil
700g stewing steak, cut into chunks
30g plain flour
1 large onion, thinly sliced
2 garlic cloves, finely chopped
1 green pepper, deseeded and thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp tomato purée
2 tbsp paprika
2 large tomatoes, diced
75ml dry white wine
300ml beef stock, homemade or shop-bought
2 tbsp flat-leaf parsley leaves
150ml soured cream

Steps:

  • Heat oven to 160C/140C fan/gas 3.
  • Heat 1 tbsp olive oil in a flameproof casserole dish or heavy-based saucepan. Sprinkle 700g stewing steak chunks with 30g plain flour and brown well in three batches, adding an extra 1 tbsp oil for each batch. Set the browned meat aside.
  • Add in the remaining 1 tbsp oil to the casserole dish, followed by 1 large thinly sliced onion, 2 finely chopped garlic cloves, 1 green pepper and 1 red pepper, both finely sliced. Fry until softened, around 5-10 mins.
  • Return the beef to the pan with 2 tbsp tomato purée and 2 tbsp paprika. Cook, stirring, for 2 mins.
  • Add in 2 large diced tomatoes, 75ml dry white wine and 300ml beef stock. Cover and bake in the oven for 1 hr 30 mins - 2 hrs. Alternatively, cover and cook it on the hob on a gentle heat for about an hour, removing the lid after 45 mins.
  • Sprinkle over 2 tbsp flat-leaf parsley leaves and season well with salt and freshly ground pepper. Stir in 150ml soured cream and serve.
