RED, GREEN AND WHITE CHRISTMAS SALAD
A festive salad filled with Christmas colours to compliment any festive spread! Perfect for making ahead.

Steps:
- Fill a large pot with water and bring to boil.
- Cut the woody ends off the asparagus, then cut the asparagus into 3. Separate the asparagus heads from the stems.
- Trim the beans and place in a separate pile.
- Remove the strings along each side of the snow peas.
- Place the beans in the boiling water. When the water comes back to the simmer again, leave the beans to simmer for 30 seconds. (Note 1)
- Add the asparagus stems in. Once it comes back up to a simmer, count 30 seconds again. Then add the snow peas and asparagus heads, bring it back up to a simmer and count to 30 seconds.
- Immediately drain the greens and run cold water over the greens for 10 seconds to stop the cooking process.
- Once cool, set aside to dry. Roughly dry with a paper towel if serving immediately.
- Combine the Dressing ingredients in a jar and shake well to mix.
- Place the greens in a bowl and toss with the Dressing.
- Transfer to a serving bowl, crumble over feta and scatter with dried cranberries. Serve immediately.

- Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add green beans. Boil uncovered 6 to 8 minutes or until crisp-tender; drain.
- Stir in remaining ingredients. Cook over medium heat about 5 minutes, stirring occasionally, until hot.

- In a large skillet, bring 1 cup water, oil, salt, and pepper to a simmer over medium heat.
- Add the green beans and onion.
- Cover, and cook until the beans are crisp-tender, 8 to 10 minutes.
- Uncover, and continue cooking, stirring frequently, until water has evaporated, beans are tender, and onions are beginning to brown, 5 to 8 minutes more.
- Stir in vinegar and serve.

SAUTEED GREEN BEANS WITH ONION

- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

- Heat the extra-virgin olive oil in a skillet over medium heat. Add the onions, rosemary and salt and pepper, to taste. Cook the onions until sweet and soft, 8 to 10 minutes. - In a large Dutch oven over medium heat, heat the olive oil; cook and stir onion and garlic until the onion is translucent, about 5 minutes.
- In a bowl, mix vinegar, water, sugar, dry mustard, and red pepper flakes until sugar has dissolved. Place the mustard greens into the onion and garlic mixture, and pour in the vinegar mixture. Stir to combine, cover the Dutch oven, and bring to a boil. Simmer the greens until the liquid has been absorbed, 5 to 10 minutes.
- Mix in the white beans, allow to heat through, and season to taste with salt and black pepper.
