RED, WHITE, AND BLUE JELLO
My mom has been making this simple and delicious dessert for years. You can easily make this for other holidays by using different colored gelatins (e.g. try black cherry and orange for Halloween). IMPORTANT: Make sure that the bottom two layers are chilled long enough to become firm and that the top layer is cool before pouring in step 4 or the top layer will go under the cream cheese layer and not make the pretty layered dessert that you want.

RED, WHITE, AND BLUE JELLO FLAG
We had a block party for Memorial Day and I brought this jello dessert. You can buy the actual mold from www.kraftfoods.com/jello/ for $3.50. I got the jello mold free for buying jello at my local grocery store, which included several recipes. If you don't have the mold, use a pan that has a 10 cup capacity. Follow directions as closely as you can as the consistency of the jello is very important. Please note that you can use (2) 4 serving size packages or (1) 8 serving size packages of jello for the red and blue layers. This will be a hit at your next holiday gathering!

Steps:
- Spray two half baking sheets and a quarter baking sheet with cooking spray. Set aside in the refrigerator.
- For the strawberry layer: Combine the hot water, plain and strawberry gelatin. Once thoroughly combined, pour the strawberry layer into one of the half baking sheets in the refrigerator. After 15 minutes of cooling, add some strawberry slices, if desired. Allow the gelatin to cool until set, about 2 hours.
- For the white layer: Combine the hot water, sweetened and unsweetened coconut milk, whole milk and plain gelatin. Once thoroughly combined, pour the white layer into the other half baking sheet in the refrigerator. Allow to cool until set, about 2 hours.
- For the blue layer: Combine the hot water and the blue and plain gelatin. Once thoroughly combined, pour the blue layer into the quarter baking sheet in the refrigerator.
- Once the layers are set, remove them from the refrigerator.
- Turn the red layer out onto a parchment-lined platter or cutting board. Slice two-thirds of the white layer into strips and reserve the remaining third to punch out stars with a star-shaped cookie cutter. Top the red layer with the white stripes. With the widest side of the blue layer facing you, cut the layer in half from the top of the baking sheet to the bottom. Add one portion of the blue layer on top of the white stripes on the top left portion of the flag. Top the blue layer with the white stars. Using a piping bag fitted with a star tip, pipe out a whipped cream border and top with blueberries.

- Prepare a 9x9-inch glass baking pan by spraying lightly with cooking spray. With a paper towel, wipe spray until only a very light layer remains. This will help the gelatin release later.
- BLUE LAYER: Mix packages of blue jello with 1 envelope of gelatin. Add 2 cups of boiling water and stir until gelatin is completely dissolved. Pour into prepared pan and set in refrigerator about 40 minutes, until gelatin is set to the touch.
- When gelatin is set to the touch, cut 1-inch strips with a hot knife. Dip knife in hot water after each cut. You can use a large ruler to measure the strips or just eyeball it. Remove every other strip and discard them. Mark a side of your metal pan (not necessary if using a glass pan) with an arrow in the direction of the stripes. The final cut will be in the opposite direction (which you won't be able to see if using a metal pan).
- RED GELATIN: Mix packages of red gelatin with 1 packet of gelatin. Add 3 cups boiling water and stir until gelatin is completely dissolved. Add 2 tablespoons of red gelatin to each of the empty spaces. Return to fridge for 15-20 minutes, or until red gelatin is set. Keep the bowl with remainder of red gelatin in a sink with hot water to keep it liquefied.
