RED, WHITE, AND BLUE CHEESECAKE CHEESE BALL

Steps:
- With a mixer, beat together the cream cheese and butter until smooth. Add vanilla and brown sugar. Slowly add in powdered sugar until mixture is combined.
- Evenly divide the mixture into 3 separate bowls. Set one bowl aside (for the white) and then add the red color to one, and the blue color to the other. Start out with just a couple drops of the food coloring and add more until you get the desired color.
- Cover a plate with wax paper. Take the red mixture and form into a small cheese ball on the plate. Freeze for a couple hours to harden. :Place the remaining 2 bowls into the refrigerator to use later.
- Remove the cheese ball from the freezer and evenly cover with the blue mixture (just like how you would ice a cake). Place back into the freezer for another couple of hours. Remove, and cover with the remaining white mixture. Return to the freezer to harden. Finally, cover with sprinkles and place into the freezer until about 20 minutes before you're ready to serve.
- Serve with graham crackers, fruit, or cookies.

- Combine cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese in a mixing bowl. Stir together until evenly and thoroughly combined. Cover with plastic wrap and refrigerate until completely chilled, about 1 hour.
- Use a sorbet scoop or spoon to form tablespoon-sized balls of cheese mixture; place on a lined sheet pan. Cover and refrigerate until firm, about 1 hour. A perfect shape doesn't matter at this point since these will be rolled in the coatings to complete the process.
- Transfer chilled cheese balls into the coatings of your choice, such as almonds, chives, and bacon, and roll around to cover. Once coated, roll each briefly in your hands to achieve the final ball shape. Transfer to a plate or pan and keep chilled in the refrigerator until ready to serve.

- Preheat the oven to 425 degrees F. Lightly grease a large baking sheet and set aside. Bring a pot of salted water to boil. Place the potatoes into the pot and cook for 12 to 15 minutes, until the potatoes are easily pierced with a fork. Drain the potatoes, rinse with cold water, and let them cool for a few minutes.
- Place a clean dish towel on the counter. Put a potato on one side of the towel, cover it with the other side, and smash the potato with your palm. Remove from oven, sprinkle blue cheese in the center of each potato, and return to the oven to bake for 3 to 5 more minutes until the cheese is melted.
