RED PEPPER HUMMUS

- Rinse and drain the chickpeas, then tip them into a food processor. Peel the garlic and crush in with the chickpeas, along with plenty of salt and pepper. Whizz briefly.
- Remove any stray seeds from the peppers, then add them to the processor with the lemon juice, olive oil and chilli. Blitz again until really smooth. Taste and add extra seasoning and chilli for more of a kick, if you like.
- Spoon into a bowl, drizzle with olive oil and serve with celery sticks, radishes and a stack of breadsticks for dipping.

THAI COCONUT CURRY HUMMUS

- Place chickpeas, garlic, tahini, lime juice, curry paste, coconut milk and olive oil in a food processor and whirl away until smooth. If the hummus is too thick, add water 1 teaspoon at a time until desired consistency is achieved.
- Taste the hummus and add more red curry paste if desired; season with salt and pepper. Serve with chips or crackers, fresh vegetables or as a spread on toast.

- Place the chickpeas, red curry paste, garlic, lime zest, and salt in the food processor. Pour 1/2 cup of coconut milk over the top and cover.
- Puree until very smooth, then check the consistency. If you like your hummus a little more loose, add another 1/4 cup coconut milk and puree again.
- Scoop into a bowl and sprinkle chopped Thai basil over the top. Serve with endive, cut vegetables, or rice crackers.

RED LENTIL CURRY HUMMUS
This Red Lentil Curry Hummus is a delicious vegetarian dip packed with protein and fiber! Makes a great appetizer!

- Add the chickpeas, red lentils, curry paste, tahini, garlic, curry powder, lemon juice and olive oil to a food processor or high powered blender.
- Add about 2 pinches of salt and a pinch of pepper and blend on high speed until the mixture is completely blended and smooth. You may need to scrape down the sides a few times to ensure everything is combined.
- The mixture may still seem a little bit mealy at this point, so add a tiny bit of water one teaspoon at a time while the blender or food processor is running (if possible) until you achieve the perfect loose, smooth texture (about 2-4 minutes of blending should do the trick!).
- Do a taste test and blend in a little more salt and/or pepper if you desire.
- Serve in your favourite bowl with a drizzle of olive oil on top and sprinkle it with some finely chopped fresh parsley. Add to a platter of fresh veggies, slices of naan bread, crackers, bagel chips, tortilla chips, or whatever you fancy for dipping, and serve!

- You can't get any easier than this: Place all ingredients into a food processor and blitz away! I like my hummus fairly knobbly (about 1 to 2 mins), if you want a smoother paste, keep going till the desired consistency is achieved.
- Serve with toasted pita, or spread on bread. This recipe can be fairly spicy though, so taste as you go. You can add more yoghurt if you like to cut the spice a fair bit.

- Start by marinating the tofu: Dice the tofu into 1-inch cubes and place in an even layer in a rectangular baking dish. Add a pinch of salt and pepper, toss to coat, and spread out in an even layer on the baking sheet. Roast for about 25 minutes, stirring halfway through.
- Place the sliced onion in a 16-oz heatproof glass jar. In a small saucepan, bring the apple cider vinegar, water, salt, and maple syrup to a boil over high heat. Remove from the heat and carefully pour over the sliced onion. Set aside for 30 minutes.
