THAI RED DUCK WITH STICKY PINEAPPLE RICE

Thai red duck with sticky pineapple rice image

Marinate duck breasts with red curry paste and lime, then serve with coconut rice, peas and beansprouts for a healthy weeknight dinner

Provided by Sarah Cook

Categories     Dinner, Main course, Supper

Time 35m

Number Of Ingredients 11

2 duck breasts , skin removed and discarded
1 tbsp Thai red curry paste
zest and juice 1 lime , plus extra wedges to serve
140g jasmine rice
125ml light coconut milk , from a can
140g frozen peas
50g beansprouts
½ red onion , diced
100g fresh pineapple , cubed
1 red chilli , deseeded and finely chopped
¼ small pack coriander , stalks finely chopped, leaves roughly chopped

Steps:

  • Sit a duck breast between 2 sheets of cling film on a chopping board. Use a rolling pin to bash the duck until it is 0.5cm thick. Repeat with the other breast, then put them both in a dish. Mix the curry paste with the lime zest and juice, and rub all over the duck. Leave to marinate at room temperature for 20 mins.
  • Meanwhile, tip the rice into a small saucepan with some salt. Pour over the coconut milk with 150ml water. Bring to a simmer, then cover the pan, turn the heat down low and cook for 5 more mins. Stir in the peas, then cover, turn the heat off and leave for another 10 mins. Check the rice - all the liquid should be absorbed and the rice cooked through. Boil the kettle, put the beansprouts and red onion in a colander and pour over a kettleful of boiling water. Stir the beansprouts and onion into the rice with the pineapple, chilli and coriander stalks, and some more salt if it needs it, and put the lid back on to keep warm.
  • Heat a griddle pan and cook the duck for 1-2 mins each side or until cooked to your liking. Slice the duck, stir most of the coriander leaves through the rice with a fork to fluff up, and serve alongside the duck, scattered with the remaining coriander.

BLACK GLUTINOUS RICE DESSERT

BLACK GLUTINOUS RICE DESSERT image

Black glutinous rice dessert is a common Asian dessert. It is also classified as tong sui, a type of sweet soup. Normally, it takes about an hour to cook black glutinous rice soft. In order to speed up the cooking process, I used instant pot pressure cooker to make this tasty and simple black glutinous rice dessert.

Provided by Tracy O.

Categories     Dessert

Number Of Ingredients 5

1.5 cups Black glutinous rice
1/2 cup Sago ((small tapioca) )
6 cups Water
1 can Coconut milk ((13.5 fl oz or 400ml))
1 cup Sugar ((can be less or more depending your sweetness))

Steps:

  • Wash the black glutinous rice, then pour 6 cups of water into the instant pot pressure cooker. Close the lid and vent, press manual, adjust time 20 minutes and natural release.
  • At the same time, boil water in a pot and get ready to cook sago (small tapioca).
  • When water is boiling, pour sago into the pot and let it boils for 5-10 minutes. After that, turn off fire and cover a lid for 10 minutes.
  • Next, use a strainer to drain the sago and rinse in cold water.
  • When the black glutinous rice is done, add 1 cup of sugar (add to your sweetness), a can of coconut milk, and cooked sago mix them well. And, enjoy!

STICKY RICE LAYER CAKE (VEGAN/GLUTEN-FREE)

Sticky Rice Layer Cake (Vegan/Gluten-Free) image

This layer cake has a slightly sticky texture and tastes faintly of coconut. It pairs beautifully with tea or coffee.

Provided by Darlene Schmidt

Categories     Dessert     Breakfast     Snack

Time 55m

Number Of Ingredients 8

1 cup glutinous rice flour (available in clear packets at Asian/Chinese food stores)
2/3 cup tapioca flour (available at health food stores, or Asian/Chinese food stores)
1 can plus 1/4 cup coconut milk
pinch salt
3/4 cup white sugar
2 teaspoons coconut flavoring
4 drops red food coloring (or other color(s) of your choice)
Optional: 1/4 cup shredded coconut (for decoration)

Steps:

  • Combine flours together in a large mixing bowl. Add the salt and sugar and stir everything together.
  • Add the coconut milk plus the coconut flavoring. Stir well by hand, or mix with electric beaters on low speed. I find a hand whisk works just fine.
  • Once you have a fairly smooth batter, pour half of it into another bowl.
  • Add a few drops of red food coloring to one of the bowls and stir to create a pink batter (or choose another color or colors according to your preference).
  • Grease a loaf pan with a few drops of cooking oil (a glass one works well so you can see the layers as you add them, but it's not necessary).
  • Place the loaf pan in a steamer, if you have one. If not, a flat-bottomed wok or large soup-type pot also works, as long as your loaf pan can fit inside it (I used a flat-bottomed wok for mine). You will also need a lid that will fit over both the loaf pan and the pot/wok.
  • Pour some water into your steamer, or into the bottom of the pot or wok (around the loaf pan) - it should be at least 1 inch deep. Don't make the water too deep, or there will be too much splashing when it boils.
  • Now pour roughly 1/3 of one color of batter (either pink or white) into the loaf pan. You can choose to make the layers thin or thick - anywhere from 1/4 to 1/2 inch of batter is good.
  • Bring the water to a bubbling boil, then reduce heat so that it is gently boiling around the loaf pan (If you're using a wok or pot, the boiling water may make the loaf pan rattle a little.) Cover the pot or wok/steamer with a tight-fitting lid so the cake can steam-cook.
  • Steam for five minutes, or until the batter is firm to the touch. Then add your second layer on top. Tips: the second and subsequent layers will take slightly longer to cook - from 8 to 10 minutes, depending on the heat of your steamer. Cook until the middle of the cake is as firm to the touch as the outside. The cake will also rise slightly as it cooks. Also, be sure to add water to your steamer or wok/pot every 10 minutes or so.
  • Continue adding layers and steaming the cake in the same way until nearly all the batter is used up. For the final layer, I like to add a few extra drops of red coloring to create a darker, contrasting top (see photo). Tips: It's better to overcook rather than undercook this cake (if you undercook some of the layers, they will turn out too soft and the cake won't hold together when sliced). Also, note that the middle of the cake may ripple towards the end - that is normal. The rippling effect will subside once it has cooled, and you won't notice it once the cake is sliced up.
  • When cake is done cooking, remove the loaf pan from the steamer and allow it to cool at least 10 minutes. After it has cooled, place in the refrigerator. Chilling it will help it firm up so that slicing will be easier.
  • When cake is cold, run a butter knife around the outside of the pan, then turn pan over and use the knife and your hands to nudge the cake out.
  • To slice it, use a sharp, non-serrated knife and one smooth slicing motion from the top downward (try not to use too much of a sawing motion). You can simply serve this cake in slices or cut out shapes, such as diamonds or squares. Serve at room temperature. ENJOY! To store this cake: Place in a covered container or in a plastic bag. It can be stored for a day or two on your counter, then place in the refrigerator. I find it's best to eat this cake up within 3 days; after that, it loses its moistness and flavor.

SIMMERED DUCK WITH CABBAGE & POTATO

Simmered duck with cabbage & potato image

Treat yourself to Barney Desmazery's one-pan solo supper - with the extra bonus of next to no washing up

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 7

1 duck breast , about 200g/8oz
2 rashers smoked back bacon , each chopped into about 6 pieces
1 medium waxy potato such as Desirée or Maris Piper, peeled and cut into about 8 chunks
¼ Savoy cabbage , roughly shredded (core removed)
150ml chicken stock
large pinch chopped parsley
small pinch chopped garlic (optional)

Steps:

  • Heat a small saucepan (one with a lid) on a medium heat. Season the breast, lay it skin side down in the pan and reduce the heat to the lowest it will go. Leave to sizzle for about 15 minutes, uncovered, until the skin is golden and crisp and has rendered most of its fat. Don't shake the pan or move the duck.
  • Remove the duck (the meat side will be raw). Pour out just over half the fat (save it for frying vegetables another time) and turn up the heat slightly. Add the bacon and fry for 2-3 minutes until starting to crisp. Add the potato, cover and cook for 10 minutes, stirring occasionally, until the potato looks sticky and has just started to brown at the edges.
  • Tip in the cabbage and stir until glossy, then pour in the stock. Nestle the duck, skin side up, among the cabbage and potato and cover the pan. Simmer gently for 10 minutes until the veg is tender and the duck cooked. Remove the duck from the pan and stir in the parsley and garlic. To serve, spoon the veg, bacon and juice on to a plate and sit the duck on top. Pour a glass of wine and enjoy the flavours of autumn.
