1 pound baking potatoes, peeled and cut in 1/3-inch dice
1 medium red bell pepper, cored, de-ribbed and cut in 1/4-inch dice
1 medium green bell pepper, cored, de-ribbed and cut in 1/4-inch dice
1 small onion, chopped
1 cup water
4 ears corn, kernels removed from cob (2 cups), cooked
4 scallions, white and green parts, trimmed and thinly sliced
2 stalks celery, peeled and thinly sliced
1 1/2 cups milk
1/2 cup heavy cream
1 tablespoon kosher salt
3 drops hot red pepper sauce
Freshly ground pepper to taste
2 tablespoons unsalted butter, optional

Steps:

  • Place potatoes, peppers, onion and water in a 5-quart casserole dish with a tightly fitting lid. Cook, covered, at 100 percent power in a high-power oven for 12 minutes.
  • Stir in corn, scallions, celery, milk and cream. Cook, covered, for 9 minutes.
  • Remove from oven. Stir in salt, pepper sauce and black pepper. Cool slightly before serving. Stir in butter if desired.

1/4 pound applewood smoked bacon, diced
1 Spanish onion, diced
4 stalks celery, diced
4 large carrots, diced
3 Idaho or Yukon Gold potatoes, scrubbed and diced (not peeled)
3 cloves garlic, chopped
Salt and freshly ground black pepper to taste
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
1 chipotle chili in adobo sauce, chopped
2 1/2 cups heavy cream
6 cups fish or vegetable stock
12 ounces white fish, like flounder, cut in large chunks
12 oysters, shucked
12 medium shrimp or scallops
4 scallions, trimmed and chopped

Steps:

  • Place bacon in a large heavy kettle over medium heat, and cook, stirring, until fat is rendered. Add onion, celery, carrots, potatoes and garlic. Season with salt and pepper to taste. Cook, stirring continually, until vegetables are coated with fat and give off liquid, about 30 minutes. Stir in herbs and chipotle with at least 1 teaspoon of its sauce. Cook, stirring often, 10 minutes.
  • Raise heat and add 2 cups cream. Bring to a boil, and cook 5 minutes. Add stock. Lower heat to medium, and cover pot. Cook until vegetables are tender, 10 to 15 minutes. Season again. Add remaining cream and more adobo if desired. Cook 15 minutes.
  • Lower heat, and add all fish and shellfish. Cook just until seafood is tender, 5 to 10 minutes. Stir in scallions and serve.

This is an excellent recipe given to me by a friend. I've made several adaptations, and love the way the house smells when this is cooking. Serve with a loaf of crusty French Bread, tossed green salad and supper's ready ! And I think Ann D.'s suggestion to add some diced red bell pepper and a few dashes of hot sauce is an excellent idea !!! I've made the changes below.

3 slices bacon
2 cups celery, diced
1 red bell pepper
2 cups onions, diced
3 garlic cloves, crushed
1 cod fish fillets or 1 any other firm white fish fillet, cut into chunks
4 cups water (or mixture of chicken broth and water)
1 (28 ounce) can plum tomatoes
2 (14 ounce) cans diced tomatoes
16 ounces fresh clams, chopped or
2 (10 ounce) cans chopped clams or 2 (10 ounce) cans baby clams
1 (10 ounce) bottle clam juice
5 red potatoes, cut into small chunks
3 carrots, diced
1 teaspoon paprika
1 teaspoon Mrs. Dash seasoning mix
1 teaspoon Old Bay Seasoning
1/2 teaspoon oregano flakes
1/2 teaspoon red pepper flakes
louisiana hot sauce (to your preference)
1/2 lb small shrimp
salt
pepper

Steps:

  • Cut bacon into small pieces and fry in pan.
  • Remove from heat, drain and set aside.
  • Saute celery, red bell pepper, onions and garlic in small amount of bacon grease for several minutes to sweat.
  • Add fish and lightly sear.
  • Add water or chicken broth and simmer for 15 minutes.
  • Add tomatoes, clam juice, clams and simmer for 1 hour.
  • Add potatoes and carrots.
  • Season with paprika, red pepper flakes, Old Bay, oregano and hot sauce.
  • Simmer until potatoes and carrots are almost tender.
  • Season with salt and pepper to taste.
  • Add shrimp 15 minutes before serving.

Sweet Corn Chowder With Shrimp and Red Peppers image

This recipe is quick and easy. My boys like it because the shrimp makes them think they are eating "high-style" (their words). I like it because it can be on the table in less than 30 minutes.

1 tablespoon olive oil
1 large yellow onion, finely chopped
1 large potato, peeled and diced
1 bay leaf
1/2 teaspoon dried marjoram, crumbled
1/8 teaspoon ground nutmeg
1 3/4 cups chicken broth
1 (17 ounce) can cream-style corn
1 (10 ounce) package frozen corn kernels, thawed
1 3/4 cups milk
1/4 teaspoon black pepper
1 (7 ounce) jar roasted red peppers, drained and thinly sliced
1 lb large shrimp, shelled and deveined

Steps:

  • Heat the oil for 1 minutes in a large saucepan over moderate heat.
  • Add the onion and saute, stirring until limp, about 5 minutes.
  • Add the potato, bay leaf, marjoram, nutmeg and stock and bring to a boil.
  • Lower the heat to moderate, cover and cook at a gentle boil until the potato is just tender, about 10 minutes.
  • Add the cream style corn, corn kernels, milk and black pepper.
  • Heat to moderate, add the red peppers and shrimp and boil gently, uncovered, until the shrimp are just cooked through, about 3 minutes.
  • Remove the bay leaf.

Number Of Ingredients 15

6 ears corn
4 cups heavy cream
2 tablespoons extra virgin olive oil
2 ounces lean slab bacon, finely diced
1 cup finely diced onion
2 medium leeks, white part only, finely diced
1 stalk celery, finely diced
2 Idaho potatoes, peeled and finely diced
4 tablespoons butter
2 cups small chanterelles, about 5 ounces, stems scraped
3/4 teaspoon caraway seeds
6 sprigs fresh thyme
Salt and freshly ground black pepper
1/2 to 1 cup chicken stock (optional)
1 pound peeky-toe crab meat, jumbo lump crab meat or diced lobster meat or a mixture

Steps:

  • Strip kernels from cobs, and reserve. Place cobs in a saucepan with cream, bring to a boil, and set aside to cool.
  • Heat oil in a large, heavy saucepan. Add bacon, and sauté over medium heat until it barely begins to brown. Stir in onion, leeks and celery. Sauté until translucent. Add potatoes, and stir. Remove cobs from cream, strain cream, and add to saucepan. Bring to a simmer. Add corn kernels. Cook until potatoes are tender, about 15 minutes.
  • Melt 2 tablespoons butter in a skillet. Add chanterelles, and sauté over medium-low heat until tender but not browned. Add to soup. Add caraway seeds, thyme, salt and pepper to taste. Thin soup with chicken stock if desired.
  • Just before serving, melt remaining butter in a small skillet, add crabmeat or lobster, and warm in butter. Put in soup plates or add to soup. Bring soup to a simmer, check seasonings, and serve.
