WARM ROCKET SALAD



Warm Rocket Salad image

Warm salads can be blooming amazing or a complete disaster. First, you have got to get your hungry guests around the table before you plate up, so as soon as their bums are on the chairs, you are tossing the warm ingredients in with the rocket leaves. Boom, boom, boom on a plate and it's in front of them.

Yield 4 servings

Number Of Ingredients 8

2 medium red onions
8 whole rashers (slices) pancetta or smoked streaky bacon
Olive oil
4 sprigs thyme
A good handful pine nuts
4 big handfuls rocket (arugula)
Balsamic vinegar
A piece of Parmesan, for shaving

Steps:

  • Peel, halve, and quarter the onions then quarter again, to give you 8 pieces from each onion. Heat a frying pan and fry off the rashers of pancetta until crisp. Add a couple of lugs of olive oil to the pan, and add the sprigs of thyme, the onions, and pine nuts with a pinch of salt. Toss around and fry on a medium heat for about 5 minutes until caramelized and sweet (not black!).
  • Then, throw everything into a salad bowl with the rocket or any nice salad leaves. Drizzle generously with balsamic vinegar, this will make a natural dressing as it mixes with the olive oil. Serve with some shaved Parmesan over the top, you can use a potato peeler to do this. Munch away.

150g / 5 oz rocket / arugula ((4 big handfuls))
15g / 0.5oz parmesan (, shaved finely using vegetable peeler)
1 tbsp balsamic vinegar
2 1/2 tbsp extra virgin olive oil
1/2 tsp each salt and pepper

Steps:

  • Shake Balsamic Dressing in jar.
  • Place rocket in a bowl, drizzle with Dressing then toss.
  • Transfer to serving bowl. Shave over parmesan. Serve immediately.

1 cup finely crushed ice (to slush consistency)
¼ fluid ounce blue curacao liqueur
2 fluid ounces lemon-flavored vodka, divided
¼ fluid ounce raspberry flavored liqueur (such as Raspberry Sour Puss®)

Steps:

  • Place half the ice into a bowl; divide the other half of the ice between 2 bowls (1/4 cup of ice in each). Place blue curacao liqueur and 1/2 fluid ounce of lemon vodka into a bowl containing 1/4 cup of ice. Mix well. Place raspberry liqueur and 1/2 fluid ounce of lemon vodka into the other 1/4 cup of ice and mix well. Mix the remaining 1 fluid ounce of lemon vodka into the bowl containing 1/2 cup of ice.
  • Layer the blue curacao-flavored ice into the bottom of a glass. Place the lemon vodka-flavored ice over the blue layer; top with the raspberry-flavored ice.

RUBY RED ROCKET COCKTAIL

I found this on the internet looking for drinks with the Ruby Red Absolut Vodka. It is from Emiril Lagasse 2002. This recipe calls for either citrus vodka or vodka, but it is terrific with the Ruby Red vodka!

1 1/2 ounces ruby red vodka
1/2 ounce triple sec
3 ounces ruby red grapefruit juice
2 teaspoons creme de cassis (I used Chambord) or 2 teaspoons raspberry liqueur (I used Chambord)
coarse brown sugar (optional garnish)

Steps:

  • If you would like to garnish the glass, wet the rim of a martini glass with a little of the ruby red grapefruit juice and then dip the rim into the brown sugar.
  • In a shaker over ice, combine the Ruby Red Vodka, Triple Sec, and juice. Shake to mix and chill.
  • Strain into the martini glass.
  • Slowly add the creme de cassis or raspberry liqueur so that it settles on the bottom of the glass.
  • Serve!
