RED RIVER BLUEBERRY MUFFINS

1 cup all-purpose flour
3/4 cup spelt flour
3/4 cup granulated sugar
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup Red River Cereal
2 eggs
1.5 cups plain yogurt (or use buttermilk)
1/2 cup high oleic safflower oil (or coconut oil for extra flavour)
1 teaspoon vanilla extract
1 zest lemon
2 cups blueberries (or berries of your choice)

Steps:

  • Preheat oven to 350 F.
  • Combine flours, sugar, baking soda, baking powder, salt and Red River Cereal in a large bowl.
  • In a separate bowl, mix together eggs, yogurt, vegetable oil, vanilla and lemon zest.
  • Mix wet ingredients into dry ingredients. Gently fold in berries.
  • Spoon batter into prepared muffin cups, filling to the top (Tip: Use an ice-cream scoop with a release to portion muffins). Bake for approximately 30-40 minutes or until toothpick inserted comes out dry.

I adapted this from a recipe on the Robin Hood site, makers of Red River cereal, which by the way, is an EXCELLENT high fiber, tasty hot cereal. It called for cranberries, didn't have any, coped. My 3 year old grandson loves these "muppins". Very moist, tasty.

3/4 cup old fashioned oats or 3/4 cup quick oats
1/2 cup red river cereal, uncooked
1 cup buttermilk (or 1T lemon juice, fill cup with milk)
1 cup flour
3/4 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/3 cup butter, melted
1 cup chopped dates

Steps:

  • Combine oats, Red River and milk in large bowl, let stand 40 minutes.
  • Combine remaining dry ingredients.
  • Add butter and egg to cereal mixture.
  • Add dry ingredients& mix well.
  • Stir in dates.
  • Spoon into 12 greased muffin tins.
  • Bake at 375 degrees for 20-25 minutes or until set.
  • Turn out to cool and store in airtight container, if there are any to store.
  • Prep time includes letting cereal soak for 40 minutes.

This is from the makers of Red River Cereal. A healthy muffin that is a bit different. I started making these because I needed to get rid of a box of Red River Cereal (don't like it)-good in these!

1 1/2 cups boiling water
3/4 cup red river cereal
3/4 cup natural bran
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 cups buttermilk or 2 cups sour milk
2 cups rolled oats
1 1/2 cups raisins, chopped dates or 1 1/2 cups dried cranberries

Steps:

  • Preheat oven to 375 degrees F.
  • Combine Red River Cereal and bran.
  • Pour boiling water on it.
  • Stir to combine and let stand 10 minutes.
  • Combine flour, baking soda, and salt.
  • Cream shortening and sugar.
  • Stir in eggs.
  • Stir in buttermilk.
  • Stir in flour mixture.
  • Stir in bran mixture.
  • Stir in oats and raisins.
  • Mix thoroughly.
  • Fill greased muffin cups almost full.
  • Bake at 375 degrees F for 18-24 minutes or until top springs back when lightly touched.
  • Remove from pan and cool on a rack.

WHAT YOU NEED
3⁄4 cup oats
1⁄2 cup red river cereal, uncooked
1 cup milk with 1tablespoon lemon juice
1 cup flour
3⁄4 cup packed brown sugar
1 teaspoon baking powder
3⁄4 teaspoon baking soda
1⁄2 teaspoon salt
1 egg
1⁄3 cup butter, melted
1 cup chopped dates

Steps:

  • 1. Combine oats, Red River and milk in large bowl, let stand 40 minutes. Make sure you do this step to allow the red river cereal to become soft.
  • 2. Combine remaining dry ingredients. Add butter and egg to cereal mixture. Add dry ingredients and mix well. Stir in dates. Spoon into 12 greased muffin tins. Bake at 375 degrees for 20-25 minutes or until set. Remove muffins from pan and cool. You can store these in an airtight container or freeze them. I wrap them up and freeze them individually for easy grab and go mornings Enjoy

CRANBERRY BREAKFAST MUFFINS

Number Of Ingredients 11

3/4 cup Robin Hood® Oats
1/2 cup Red River® Hot Cereal, uncooked
1 cup buttermilk
1 cup Robin Hood Original All Purpose Flour
3/4 cup packed brown sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 egg
1/3 cup Vegetable or Canola Oil
1 cup cranberries, fresh or frozen

Steps:

  • Combine oats, cereal and buttermilk in a large bowl. Let stand 40 minutes.
  • Preheat oven to 375°F (190°C). Grease or line 12 cup muffin pan with paper liners.
  • Add egg and oil to cereal mixture.
  • Combine flour, brown sugar, baking powder, baking soda and salt in a separate bowl. Mix well. Add flour mixture to cereal mixture. Stir in cranberries. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 18 to 20 minutes, or until a toothpick inserted in centre of muffin comes out clean.

Mix together:
2 cups whole wheat flour
3 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 cup loose packed raisins
2 cups Red River Cereal
add all at once:
1 cup skim milk (mixed ahead with 1 tsp vinegar)
1 1/4 cup unsweetened apple sauce
1/3 cup canola or vegetable oil
1 cup honey
2 tblsp molasses
2 eggs (beaten)
2 tsp vanilla

Steps:

  • mix dry ingredients in blender. Turn blender off and add all wet ingredients. Mix on medium-low speed for 1-2 minutes. Fill muffin tins 3/4 full and bake at 375 for 20-25 minutes.
  • Makes 24-28 muffins.

2 1/2 cups ROBIN HOOD All Purpose Flour (any flour will do)
2 1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup oil
1 1/2 cups granulated sugar
2 eggs
2 cups buttermilkk
2 cups ROBIN HOOD or OLD MILL Oats
1-1 1/2 cups chopped dates and dried cranberries

Steps:

  • POUR boiling water over Red River Cereal and bran; let stand.
  • COMBINE flour, baking soda and salt. Mix well.
  • CREAM shortening, sugar, eggs and buttermilk together in large bowl until blended. Add flour mixture with bran mixture, oats and raisins. Mix thoroughly. Spoon into greased muffin cups, filling almost full.
  • BAKE at 375°F (190°C) for 18 to 23 minutes, or until top springs back when lightly touched.
  • Makes 24 muffins
