RED RIVER HOT CEREAL MIX (COPYCAT)

Red River Hot Cereal Mix (Copycat) image

I bought a box of Red River hot cereal recently-specifically to create a copycat version although it's been on my To Do List for a long time. All ingredients were purchased in bulk at the natural food store using Oregon-based Bob's Red Mill products exclusively including organic 'Pumpernickel Dark Rye Meal' which I was happy to discover. *Please* note that I estimated amounts for this cereal and you can adjust the amounts if you wish. The cooking directions were taken directly from the back of the box.

  • In a large mixing bowl combine all of the dry ingredients (except the baking soda) and mix well with a large whisk - this is my lazy way of sifting.
  • Pour the buttermilk into a medium bowl or liquid measuring cup and add the baking soda - the soda will react with the buttermilk and start to bubble.
  • Form a well in the middle of the dry ingredients and add the buttermilk/soda combination. Mix just until the dry ingredients are incorporated. You don't want to overdo it.

COUNTRY BREAD, CITY BREAD - CHEF MICHAEL SMITH
All-purpose flour has less gluten but will still produce a beautiful loaf of bread. In either case the dough is strong enough to hold lots of multi-grain bits so, in the Country Bread, for a multi-grain mix, you may use a blend such as Red River cereal or a 12-grain cereal breakfast blend. You may also use plain oatmeal, cornmeal or even potato flakes.
