1/2 cup 2% milk
1/4 cup butter, cubed
1/2 teaspoon pepper
1/8 teaspoon salt
1-1/2 cups shredded cheddar cheese, divided
1/2 cup crumbled cooked bacon
1 cup sour cream
2 tablespoons minced fresh chives

Steps:

  • Preheat oven to 350°. Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain; return to pot., Mash potatoes, gradually adding milk, butter, pepper and salt. Spread into a greased 3-quart baking dish; sprinkle with 1 cup cheese and bacon. 8 cups shredded sharp Cheddar cheese
4 cups processed cheese sauce
2 cups sour cream
2 cups mayonnaise
2 large onions, finely chopped
1 tablespoon minced chives
2 teaspoons salt
2 teaspoons ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain, cool, and cut into cubes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Preheat oven to 325 degrees F (160 degrees C). Lightly grease an 8-quart baking dish.
  • Combine potatoes and bacon in a large bowl. Mix Cheddar cheese, cheese sauce, sour cream, mayonnaise, onions, chives, salt, and pepper in a bowl. Stir cheese mixture into potatoes; transfer to baking dish and cover with aluminum foil.

1 pound sliced bacon, cooked and crumbled
1 pound cheddar cheese, cubed

1 large onion, finely chopped

1 tablespoon minced chives
1 teaspoon salt

Steps:

6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.

2 pounds red potatoes, cut into evenly sized pieces
5 fresh thyme sprigs, or to taste
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ large red bell pepper, seeded and cut into 1-inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
  • Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.

2 cups chopped onions (I use White)

1/2 cup chicken broth
1 cup shredded mozzarella cheese
1 table spoon thyme
2 cups panko breadcrumbs

Steps:

  • Pre Heat Oven to 400 Degrees.
  • Remove casings form Sausage.
  • Add sausage to non stick skillet over Medium High heat until browned (about 5 minutes).
  • Continuously stir sausage to crumble into pieces.
  • Remove Sausage from Pan and place on paper towels to drain fat.
  • Melt butter in pan.
  • Add chopped Onion and Thyme and saute for 4 minutes.
  • Add potatoes and salt to skillet saute for about 5 minutes until browned.
  • Stir in Sausage and Broth, Mix Well.
  • Spoon into 11 x 17 baking dish sprayed with cooking spray.
  • Top with Cheese and Panko.
  • Cover and Bake for 30 minutes at 400 degrees.
  • Uncover and bake for additional 15 minutes or until golden.

6-8 medium skin on red potatoes, cut in 1/2? cubes
1/3 c olive oil
1 1/2 tsp salt
1 tsp black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp hot sauce (more if you like it HOT)
Topping:
2 c fiesta blend cheese
1 c crumbled bacon
1 c diced green onion

  • How to Make:
  • Preheat oven to 400 degrees. Spray a 9X13″ baking dish with cooking spray.
  • In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add the cubed potatoes and chicken and stir to coat. Carefully scoop the potatoes and chicken into the prepared baking dish..
  • Bake the potatoes and chicken for 55-60 minutes, stirring every 20 minutes, until cooked through, crispy, and browned on the outside. While the potatoes are cooking, fry your bacon (about half a pound).
  • Once the potatoes and chicken are fully cooked, remove from the oven. Top the cooked potatoes with the the cheese, bacon, and green onion. Return the casserole to the oven and bake for 5 minutes or until cheese is melted.
