FETA CHEESE TURKEY BURGERS
Ground turkey makes a great burger. It makes an even better one with feta cheese and kalamata olives. Serve these tasty treats with sun-ripened tomatoes and Greek-style pita.

- Preheat the grill for medium high heat.
- In a large bowl, combine turkey, feta cheese, olives, oregano, and pepper. Mix together, and form into patties.
- Lightly oil the grate. Place patties on the grill. Cook for 10 to 12 minutes, turning halfway through.

GREEK TURKEY BURGERS
Steps:
- Preheat the oven to 420°F.
- Add all the ingredients to a large bowl and mix together thoroughly.
- Scoop out a large fistful of meat, roll it into a ball, then flatten it to form a patty around 1 ½ inches thick. Repeat with the remaining meat to make 5 large patties of equal size.
- Once the patties are formed, use your thumb to make a shallow indentation in the middle of each patty to prevent them from forming a dome as they cook.
- Set a large oven-safe nonstick skillet over medium-high heat and spray lightly with olive oil. When the skillet is hot, add the patties.
- Cook on one side for 3 to 4 minutes, until the edges are brown and seared, then flip the patties over.
- Cook for an additional minute, then place the entire skillet in the oven to cook until the internal temperature is 165°F, 9 to 11 minutes.
- You can also bake them on a baking sheet lined with parchment paper or aluminum foil for 8 to 10 minutes.
- Enjoy these as a burger with a toasted whole wheat bun, butter lettuce, cucumber slices, thin red onion slices (optional), sliced tomato, and a little Greek yogurt instead of mayo. Or pair a patty with salad, rice, quinoa, or even roasted vegetables!

- Cut onion in half. Finely chop one half and thinly slice the remaining half. Combine 1/2 cup feta, sun-dried tomatoes, chopped onion, salt and pepper in a large bowl. Crumble turkey over mixture and mix well. Shape into six patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., Meanwhile, in a small nonstick skillet coated with cooking spray, saute sliced onion until tender. GREEK TURKEY BURGERS W FETA/RED PEPPERS
Steps:
- 1. Heat a grill pan or frying pan over medium-high heat. Brush the onion slices with oil and grill/saute the onions until very tender, flipping the slices halfway. The longer you cook, the sweeter the onion will taste. Take 1/4 of the onions and finely chop. Reserve the remaining onions as rings to top the burger. 2. In a large bowl, combine the chopped onions, salt, pepper, ground turkey, Dijon mustard, coriander, parsley, garlic and cumin. Use your hands to mix thoroughly. Divide the mixture in 4 and shape into patties. With your fingers press down gently in the center of each patty to make a slight depression in the middle (the center of patty rises during cooking, so making a depression in middle will ensure an even patty). 3. Heat a grill pan or frying pan over high heat. Brush the burger with a little bit of olive oil. When the pan is hot, grill the patties for 2 minutes. Flip the patties and grill another 2 minutes. Turn the heat to medium-low, cover the pan and cook until the patties are cooked through, about 3-5 minutes, depending on how thick your patties are, what protein you use and how done you like your burgers. I suggest cooking pork, turkey and chicken all the way through. 4. Serve with the burger buns, Roasted Pepper and Feta Spread and the reserved grilled onions, tofu and sprouts.

- Preheat broiler. Mix cucumber and mayonnaise. For burgers, mix red pepper and seasonings. Add chicken and cheese; mix lightly but thoroughly (mixture will be sticky). Shape into six 1/2-in.-thick patties., Broil burgers 4 in. from heat until a thermometer reads 165°, 3-4 minutes per side. Serve on buns with cucumber sauce. If desired, top with lettuce and tomato. - Mix all of the ingredients for the turkey burgers, bar the olive oil, together in a large bowl. Season with a generous amount of black pepper and a little salt (you won't need a lot because of the feta). Shape into 4 burgers, the mixture will be quite sticky so cover and chill in the fridge for 15 mins or until needed to firm up a little. At this point the burgers can also be frozen.
- Preheat the grill to its highest setting then brush the burgers on both sides with the olive oil. Transfer the burgers to a non-stick baking tray and cook for 8-10 mins on each side, until cooked through and golden brown.
- While the burgers are cooking, mix together the olive oil, lemon juice and some seasoning. Add the rocket and tomatoes to a large salad bowl, add half the dressing and toss well to combine. Serve alongside the turkey burgers and with the extra dressing on the side.

- For Burgers:
- Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties. Place 1 tablespoon goat cheese atop 1 turkey patty; place second patty atop cheese. Seal patties at edges to enclose cheese. Repeat with remaining 5 portions. (Can be prepared 4 hours ahead. Cover and refrigerate.)
- Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.
- For Relish:
- Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.
- Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.) Makes about 2 cups.
