CARAMELIZED ONION QUESADILLAS

Caramelized Onion Quesadillas image

I love caramelized onions and this is a great way to use them. It's a little different in that the onions are chopped instead of sliced into rings. The recipe comes from a community cookbook.

Provided by Lvs2Cook

Categories     Onions

Time 35m

Yield 24 pieces

Number Of Ingredients 8

3 tablespoons olive oil
1 large onion, chopped
2 tablespoons balsamic vinegar
1 teaspoon sugar
12 flour tortillas
6 ounces Fontina cheese, shredded
4 ounces goat cheese, crumbled
olive oil

Steps:

  • Caramelized Onions: heat the olive oil in a large skillet and add the onion. Cook for 10 minutes or until tender. Add the vinegar and sugar. Cook for 3 minutes or until sugar is dissolved and the mixture is light brown. Remove from the heat.
  • Place 3 tortillas on a baking sheet. Cover each tortilla with fontina cheese, caramelized onion and goat cheese. Top each with a second tortilla. Brush the tops with olive oil.
  • Bake at 350°F for 8-10 minutes or until the tops are golden brown and the cheese is melted. Repeat until all ingredients are used.
  • Cut each quesadilla into 4 wedges.
  • Serve hot.

SIMPLE ONION MUSHROOM QUESADILLAS

Simple Onion Mushroom Quesadillas image

Make and share this Simple Onion Mushroom Quesadillas recipe from Food.com.

Provided by zaar junkie

Categories     Lunch/Snacks

Time 20m

Yield 2 serving(s)

Number Of Ingredients 5

1/2 large onion, chopped
5 ounces sliced mushrooms
tillamook cheddar cheese, shredded
4 flour tortillas
butter, earthbalance

Steps:

  • Heat a skillet to medium heat and fry onion in a bit of oil or butter. When onion is translucent, add mushrooms and cook until mushrooms have released their juice and the onion is a little browned, about 5 minutes or so. Remove and reserve in a bowl when done.
  • Using the same skillet, turn the heat down to medium-low: butter one side of a tortilla and place the buttered side down on the skillet, add some onion/mushroom mix and shredded cheddar cheese. Place another tortilla on top, but with the buttered side facing towards you. Cook for a couple minutes, until cheese starts to melt and the bottom tortilla is lightly browned. Flip and repeat. Remove from skillet and repeat with remaining ingredients.
  • Cut in quarters and serve. It's good on it's own, or with typical condiments like sour cream and salsa.

CAVIAR DIP

Caviar Dip image

Uses inexpensive black caviar sold in glass jars at most markets. Don't use the good stuff because it will be overwhelmed by the other ingredients. From "Fast Appetizers" by Hugh Carpenter and Teri Sandison. Note: Caviar should not be eaten with a metal spoon because metal oxidizes the eggs and gives them a off taste. The most common serving spoon is mother-of-pearl.

Categories     appetizer

Time 30m

Yield 16 wedges

Number Of Ingredients 16

2 tablespoons olive oil, plus extra for griddle
1 small red bell pepper, diced
1/2 red onion, diced
3/4 cup corn kernels, (about 1 ear)
2 teaspoons red pepper flakes
1 teaspoon ground cumin
Salt and freshly ground black pepper
1/2 cup freshly chopped cilantro leaves
Four 10-inch "burrito size" flour tortillas
One 16-ounce can refried black beans
1 cup grated Pepper Jack cheese
Lime-Cilantro Sour Cream, recipe follows
1/2 cup sour cream
1/4 cup freshly chopped cilantro leaves
1/2 lime, juiced
Pinch salt

Steps:

  • In a large skillet, heat oil over medium-high heat. Saute red pepper and onion until soft, about 5 minutes. Add corn, red pepper flakes, cumin, and salt and pepper to taste. Toss to incorporate and saute for 3 minutes. Transfer to a bowl and add the cilantro. Preheat a long, 2-burner cast iron griddle, or a large saute pan over medium heat. Lay 2 tortillas on a work surface and spread each evenly with refried black beans. Place tortillas, bean side up, on the griddle (begin with 1 if using a saute pan). Sprinkle onion-red pepper mixture evenly over the top of each, then sprinkle evenly with the cheese. Cover with another tortilla coated with refried black beans and cook until cheese melts, about 4 minutes. Flip quesadillas to toast the other side. Slice each quesadilla into 8 wedges, sprinkle with cilantro, and serve with Lime-Cilantro Sour Cream.
  • In a small bowl, mix all ingredients together until combined. Season, to taste, with salt if needed.

Provided by Melanie B.

Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 16

8 medium flour tortillas
3/4 cup red onion, cut in half and thinly sliced
1/4 lb monterey jack cheese, grated
8 -10 small red potatoes, washed
6 tablespoons olive oil
1 garlic clove
1 tablespoon rice wine vinegar
2 teaspoons thyme, leaves removed from stems
salt
pepper
1/4 cup sour cream
1 tablespoon cilantro, fresh chopped
2 teaspoons adobo sauce, from canned chipotles in adobo sauce
honey, just a drop
salt
pepper

Steps:

  • Toss Potatoes in 1 TBS Olive Oil and Thyme. Season with some salt and pepper. Roast in a 375 degree oven for about 30-40 minutes, or until potatoes are tender. Remove from oven and slice into flat pieces when cooled.
  • In a large saute pan, heat 1 TBS oil over medium heat-high heat. Add onions and season with salt and pepper. Cook until they caramelize, about 8-10 minutes, stirring often. Add the garlic and vinegar. Cook for about 1 more minute. Remove from heat.
  • Mix together the sour cream sauce ingredients.
  • Make 4 Quesadillas by layering the cheese, onions, and potatoes on 4 tortillas. Top with the remaining 4 tortillas. Press.
  • Heat remaining 1 TBS oil in a non-stick skillet to medium high. Carefully cook each quesadilla for about 1-2 minutes on each side. You will know it is done when the cheese is oozing out and the tortilla is browned and crisp on the outside. Repeat the process, 1 TBS of oil per quesadilla.
  • Serve with the sour cream sauce.
