- Combine all the ingredients for the Mango Salad in a large bowl. Toss to combine. *If making ahead, cover and refrigerate at this point, before adding the salad dressing.
- Prepare the Mango Salad Dressing by combining all the ingredients in a small bowl and whisking well to combine. Cover and refrigerate if making ahead or use immediately by drizzling over the salad and tossing to combine.

MANGO RED ONION SALAD WITH MINT VINAIGRETTE

- Cut the mangos in half, using the tip of your knife to cut around the large seed in the center. With the knife tip make slashes in the pulp of the fruit but not through the skin. Cut again in the other direction so that you've made hash marks in the fruit. Now turn the skin of the fruit inside out so that the fruit projects outward. With a spoon scoop out the already cut fruit into a mixing bowl.
- Peel the onion, cut in two and slice from root end to stem end into a fine julienne. Mix the mango and onion together.
- Combine the honey, lime juice, mint and soy in a small bowl. Pour this vinaigrette over the mango and onion and serve.
WARM ROCKET SALAD
Warm salads can be blooming amazing or a complete disaster. First, you have got to get your hungry guests around the table before you plate up, so as soon as their bums are on the chairs, you are tossing the warm ingredients in with the rocket leaves. Boom, boom, boom on a plate and it's in front of them.

- Peel, halve, and quarter the onions then quarter again, to give you 8 pieces from each onion. Heat a frying pan and fry off the rashers of pancetta until crisp. Add a couple of lugs of olive oil to the pan, and add the sprigs of thyme, the onions, and pine nuts with a pinch of salt. Toss around and fry on a medium heat for about 5 minutes until caramelized and sweet (not black!).
- Then, throw everything into a salad bowl with the rocket or any nice salad leaves. Drizzle generously with balsamic vinegar, this will make a natural dressing as it mixes with the olive oil. Serve with some shaved Parmesan over the top, you can use a potato peeler to do this. Munch away.

BALSAMIC MANGO RED ONION SALAD • LOAVES AND DISHES

- Chop up the lettuces into bite size pieces after rinsing and drying them well. (They really do better if you tear them - but cutting will work). Cut the onion in half from top to bottom and then laying your onion on the cut half, remove the top layer of skin. Slice the onion into very thin slices (you only need about ¼ of the whole onion for this salad). Peel the mango using a veggie peeler and then use a sharp knife to whittle small bite size pieces from the edge of the mango until you have removed all of the flesh. Mix the salad together.
- Mix the Vinegar and the Olive Oil together using a whisk until it has come together. Pour over the mixed salad. Using your vegetable peeler, shave off some parmesan cheese from a block of cheese. Sprinkle with a generous amount of salt and pepper (very important to the flavor of the salad). Serve immediately.
