Got this from a friend and it was a big hit on newyears eve!! I don't like onions much, but can eat this all by myself if left unchecked!

1 red onion, finely chopped
1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup olive oil
1/2 cup grainy mustard

Steps:

  • preheat oven to 350.
  • mix all ingredients.
  • put in small baking dish.
  • bake at 350 for 20 minutes.
  • increase oven temp to 420.
  • bake for an additional 15-20 minutes.
  • I put this on top of baguette slices that I have lightly toasted in the oven with olive oil baste.

This relish is good served with all kinds of things. I particularly like it with bratwurst and grilled pork.

1 1/2 lb medium-sized purple onions, sliced
1/2 c sugar
1/4 c vegetable oil
2 Tbsp vegetable oil
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 c red wine vinegar or sherry vinegar (5% acidity)
1/2 c sweet red vermouth
2 Tbsp red currant jelly

Steps:

  • 1. Combine the first 5 ingredients in a large Dutch oven; stir well. Cover and cook over low heat for 40 minutes, stirring occasionally.
  • 2. Add vinegar, vermouth, and jelly. Stir well. Bring to a boil; reduce heat, and simmer, uncovered 30 to 35 minutes or until slightly thickened, stirring occasionally.
  • 3. Remove from heat and let cool. Store in an airtight container in the refrigerator.

This is a fantastic relish to serve with Turkey or other meats, or as everyone I work with believes with a sharp cheese on crackers. This Relish is so yummy that it vanishes out of my work fridge faster than I can make it. I first made it last year for Christmas hampers and have had constant requests since.

Number Of Ingredients 9

50 g butter
900 g red onions, Sliced thinly or 3 large red onions
1 kg cranberries (if using dried rehydrate first, Frozen or fresh are fine also)
2 cups brown sugar, firmly packed
1 cup malt vinegar or 1 cup apple cider vinegar
1/2 cup balsamic vinegar
1 teaspoon coarse salt (Cooking)
4 cloves
1/2 teaspoon dried chili pepper flakes

Steps:

  • Melt butter in a large saucepan then add onion and cook stirring until soft.
  • Add the remaining ingredients and stir over heat until the suger dissolves. Bring to the boil, then reduce heat and simmer uncovered, stirring occasionally until thick (about 1 hour).
  • Meanwhile sterilise Jars for storage.
  • When thick pour relish into hot sterilised jars, seal immediately.
  • Store for up to 3 months in the fridge.

  • Mix together and chill for several hours before serving.
  • Use within 48 hours.

A delicious vinegar & red onion relish perfect with homemade burgers...

Number Of Ingredients 4

2 red onions
50g butter
1 tbsp brown sugar
1 tbsp Good quality red wine vinegar (I found a gorgeous French Cabernet Franc red wine vinegar which was so flavoursome)

Steps:

  • Chop the red onions into slices
  • Melt the butter in a saucepan and add the sliced onion to the melted butter
  • Fry for a few minutes, then add the brown sugar and red wine vinegar
  • Stir and allow to simmer on a low heat for 20 minutes, stirring regularly to prevent the sugar from burning.
  • It should now have reduced to a delicious dark red relish - Serve straight away or pop in a jar and store in the fridge for a later date.
