1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup finely chopped red onions
1 clove garlic, pan toasted, peeled and chopped
1/4 tsp. coarsely ground black pepper
2 Tbsp. chopped fresh parsley
roasted vegetable round buttery cracker

Steps:

  • Mix cream cheese, onions, garlic and pepper until well blended. Shape into 6-inch log; wrap tightly in plastic wrap.
  • Refrigerate 30 min. or until firm. Roll in parsley until evenly coated on all sides.
  • Serve as a spread with the crackers.

The naturally sweet flavors of caramelized onions and cinnamon come together in these cream cheese topped crackers.

1 large onion, thinly sliced
3 tablespoons olive oil
1/3 cup roasted red bell peppers, drained and coarsely chopped
2 tablespoons chopped fresh flat-leaf parsley
1/8 teaspoon kosher salt
1/8 teaspoon coarse ground black pepper
1 package (3 oz.) cream cheese, softened
1/2 teaspoon cinnamon
24 Keebler® Town House® Original crackers

Steps:

  • 1. In large skillet cook onion in oil, uncovered, over medium-high heat for 15 to 20 minutes or until golden brown, stirring occasionally.
  • 2. Stir in bell peppers, parsley, salt and black pepper. Cook over medium heat for 4 minutes more, stirring occasionally.
  • 3. Meanwhile, in small bowl stir together cream cheese and cinnamon. Spread on KEEBLER TOWN HOUSE Original crackers. Top with onion mixture. Serve warm or at room temperature.

1 small red onion, quartered
1 teaspoon olive oil
1 (7 ounce) jar roasted red peppers, drained
12 fresh basil leaves, can sub about 1/2 tsp. dried
12 ounces cream cheese, room temp
bagel chips, and or vegetables

Steps:

  • Preheat oven to 400 degrees.
  • Place quartered onion in small baking dish. Drizzle oil over.
  • Bake until soft, about 45 minutes. Cool.
  • Puree onion with roasted red peppers and basil leaves in food processor.
  • Add cream cheese and blend just until combined.
  • Season with salt and pepper to taste, pulse to blend.
  • Transfer to medium bowl, cover and refrigerate at least 3 hours.
  • Place dip in center of platter/serving plate and surround with bagel chips and/or cut fresh vegetables.
  • Makes about 2 1/2 cups.

1 1/2 cups dried black beans, picked over and rinsed
2 quarts plus 1/4 cup water
1 large green bell pepper, chopped fine, reserving about 1 teaspoon for garnish
1 small red onion, chopped fine, reserving about 1 teaspoon for garnish
3 tablespoons vegetable oil
1 1/2 teaspoons ground cumin, or to taste
2 tablespoons cider vinegar, or to taste
tortilla chips as an accompaniment
cherry peppers for garnish if desired

Steps:

  • In a large saucepan let the beans soak in cold water to cover for 1 hour, drain them, and in the pan combine them with 2 quarts of the water. Bring the water to a boil and cook the beans at a slow boil for 1 hour, or until they are tender.
  • While the beans are cooking, in a large heavy skillet cook the bell pepper and the onion in the oil over moderate heat, stirring, until the vegetables are softened. Drain the beans, reserving 1/2 cup of them, add the remaining beans to the bell pepper mixture with the remaining 1/4 cup water, and simmer the mixture, covered tightly, for 15 minutes, or until the beans are very tender. In a food processor blend the mixture with the vinegar and salt to taste, pulsing the motor until the mixture is combined well but not puréed smooth. Transfer the dip to a bowl and stir in the reserved 1/2 cup beans. The dip may be made 2 days in advance and kept covered and chilled. Garnish the dip with the reserved bell pepper and onion and serve it with the tortilla chips.

1 garlic head, halved crosswise
1 medium onion, peeled, halved crosswise
4 tablespoons olive oil
1 red bell pepper
1 8-ounce package cream cheese
1/2 cup crumbled feta cheese
6 Kalamata olives or other brine-cured black olives, pitted
1 tablespoon drained capers
1 French-bread baguette, cut into 1/4-inch slices

Steps:

  • Preheat oven to 375°F. Place garlic and onion, cut side down, on small baking sheet. Brush with 2 tablespoons olive oil. Bake until onion is tender and garlic is golden and tender, turning over halfway through baking, about 30 minutes. Cool.
  • Char red bell pepper over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes to steam. Peel and seed pepper. Chop coarsely.
  • Squeeze garlic from skin. Cut each onion half into quarters. Place garlic, onion, red bell pepper and next 4 ingredients in processor and blend well. Transfer to small bowl. Cover and refrigerate until firm, about 2 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat broiler. Place baguette slices on baking sheet. Brush with remaining 2 tablespoons oil. Broil until golden brown, about 2 minutes. Stir dip and serve with toasted baguette slices.

6 pounds red bell peppers
1 pound Italian plum tomatoes
2 cloves garlic, unpeeled
1 small white onion
½ cup red wine vinegar
2 tablespoons finely chopped fresh basil
1 tablespoon sugar
1 teaspoon salt
5 Ball® or Kerr® Half-pint (8 oz) Jars with lids and bands

Steps:

  • Roast red peppers, tomatoes, garlic and onion under a broiler or on a grill at 425 degrees F, turning to roast all sides, until tomatoes and peppers are blistered, blackened and softened and garlic and onion are blackened in spots. Remove from heat.
  • Place pepper and tomatoes in paper bags, secure opening and let cool about 15 minutes. Allow garlic and onion to cool. Peel garlic and onion. Finely chop garlic. Set aside. Finely chop onion, measuring 1/4 cup. Set aside. Peel and seed peppers and tomatoes. Place peppers and tomatoes in a food processor or blender, working in batches, and process until smooth.
  • Prepare boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • Combine pepper and tomato puree, garlic, onion, vinegar, basil, sugar and salt in a large saucepan. Bring to a boil. Reduce heat and simmer until mixture thickens and mounds on a spoon, about 20 minutes.
  • Ladle hot spread into hot jars leaving 1/2 inch headspace. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.
  • Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.
