RED LOBSTER® OVEN-ROASTED TILAPIA WITH VEGETABLES
My husband really likes the Wood-fired Grilled Tilapia with Vegetables at Red Lobster® and challenged me to come up with a home version. He thinks this is just as good as the Red Lobster® version. Serve over hot rice.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Lay aluminum foil squares on a work surface. Place 5 spears of asparagus in the center of each square; distribute equal amounts of the green beans, carrots, and artichoke hearts among the squares. Lay tilapia fillets over vegetables.
- Top each fillet with basil, Italian seasoning, garlic salt, salt, and pepper. Place 1 tablespoon butter and a drizzle of olive oil on each fillet. Top with tomato slices, lemon slices, and a squeeze of lemon juice. Fold aluminum foil edges together over each fillet to create a tightly sealed packet.
- Place packets on a baking sheet and bake in preheated oven until fish flakes easily with a fork, 20 to 30 minutes.

FISH IN FOIL
The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
- Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
- Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

- Vegetable Mix: Mix vegetables and season with salt and pepper or Mrs. Dash vegetable seasoning. Fish In A Bag: Fold parchment paper in half short ways and crease. Unfold parchment paper and brush completely with melted butter to the edges. Place 1/2 cup vegetable mix in the center of the right half. Brush melted butter on two 2.5-ounce fresh fish filets and shake on a generous coating of Old Bay or Seafood seasoning. Place seasoned fish 1/2-inch apart on top of vegetable mix to allow for even cooking. Place one lemon wheel and one sprig of thyme on fish. Fold the left side of the parchment paper over the right side. Crimp paper (like a pie crust) until bottom and top of the paper are completely sealed. Brush top of parchment paper with melted butter to the edges to prevent bag from burning when cooked. Repeat for each serving. Place bags on a greased cookie sheet with an inverted buttered pie pan over each (to prevent paper from burning). Bake at 350 degrees for 12 to 15 minutes. This recipe yields 4 servings.
