- Preheat air fryer to 390 degrees F (200 degrees C).
- Place buns in the basket of the air fryer and cook for 2 minutes. Remove buns to a plate.
- Place hot dogs in the basket of the air fryer and cook for 3 minutes. Transfer hot dogs to buns.

- For the onion sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 5 minutes. Stir in the chile powder and cinnamon and cook for 1 minute. Add 1 cup water, the ketchup, hot sauce, salt and black pepper and bring to a simmer. Cook until thickened and the onions are very soft, adding more water if needed, about 25 minutes. Transfer to a bowl and let cool to room temperature before serving.
- For the grilled pepper relish: Combine the garlic, peppers, oil, vinegar and parsley in a bowl and season with salt and pepper. Cover and let sit at room temperature for at least 30 minutes before serving.
- For the hot dogs: Heat a grill to high for direct grilling. Brush the dogs with oil and sprinkle with pepper. Grill until slightly charred and golden brown on all sides, about 6 minutes. Put the hot dogs in the buns and top with mustard, onion sauce and grilled pepper relish.

Steps:
- Cook onion & garlic over medium-low heat until onion is tender, about 10 minutes, stirring frequently.
- Add salt, pepper, Worcestershire, mustard, sugar, and chili sauce. Continue heating until flavors are well blended, about 5 minutes.
- Split each hot dog lengthwise, and arrange split-side up in shallow pan.
- Spoon sauce over hot dogs and heat under broiler for 3-5 minutes, until sauce is bubbly.
- Serve hot on buns, spoon on extra sauce.

- To make the slaw: Whisk together vinegar, 1/3 cup sugar, vinegar, mayonnaise, celery seeds, and black pepper in small bowl. Set aside. Place cabbage in a large bowl, sprinkle with remaining 2/3 cup sugar and salt, and toss to combine. Add in garlic, cumin, coriander, oregano, tomato paste, and sugar and cook until fragrant, about 1 minute. Add in remaining 2 cups chicken stock and scrape up any browned bits from bottom of pan with a wooden spoon. Add in beef and whisk until completely broken down and mixture is homogeneous. Add in pureed chiles and bring to a boil. Reduce heat to low, cover with lid slightly ajar, and simmer until thickened, about 1 hour and 15 minutes.
- Combine masa harina and 2 tablespoons water in a small bowl and mix until combined. Add masa mixture, fish sauce (if using), and hot sauce to chili and stir to combine. Increase heat to medium-high, bring to a boil, and cook until thickened, about 2 minutes. Season with salt and pepper to taste.
