CHRISTMAS CINNAMON PEARS
This is one of our family's favorites at Christmas. It not only tastes great, it is beautiful on any holiday plate. This recipe is very simple and everyone will want to know how you made it.

Steps:
- Drain the liquid from the cans of pears into a saucepan. Add red hot candies to the juice. Cook over medium heat, stirring constantly, until the candy has dissolved. Stir in the food coloring, remove from heat, and allow to cool.
- Place the pear halves in a deep bowl. Pour the liquid over the pears, cover, and refrigerate overnight. You may want to stir a couple of times to evenly distribute the color. Serve pear halves cold on top of a leaf of lettuce.

GRILLED PEAR SUNDAE

Steps:
- Preheat grill to medium.
- In a small saucepan add butter, brown sugar, apple cider, cinnamon, ginger, and salt. Place onto grill until butter melts. Mix together until well combined.
- Place pears directly onto grill for 2 to 4 minutes. Turn and cook on the other side. Brush both sides of the pears with the butter mixture to glaze. Immediately take pears off the grill after glazing and place on a plate.
- Scoop ice cream into 4 serving bowls. Top with pears, pecans and whipped cream. Drizzle the remaining butter mixture on top and serve.

- Core pears from the bottom, leaving stems intact. Peel pears. Cut 1/4 in. from bottom to level if necessary. In a 2-qt. microwave-safe dish, combine the brown sugar, butter, cinnamon and cloves; top with pears. , Cover and microwave on high for 10-12 minutes or until pears are tender. Remove pears to dessert plates. Discard cloves. Whisk frozen yogurt into sauce until smooth. Spoon over pears. Serve warm or chilled.

CINNAMON RED HOT PEARS CANNING RECIPE
How to make cinnamon pears for canning with cinnamon red hot candy.

Steps:
- Prepare your jars and add water to your water bath canner. Start heating the water.
- Prepare the syrup on the stove. Bring the water and sugar boil to dissolve the sugar and reduce the heat so the syrup stays hot.
- Wash, peel, and cut your pairs. You can add Fruit Fresh to prevent browning if desired.
- Add the pears and to the syrup and simmer for 5 minutes to heat the pears for a hot pack.
- Place 15 cinnamon red hot candies in each quart jar.
- Use a slotted spoon to place the pears into hot jars. Fill the jars with the syrup. Leave a ½ inch headspace.
- Wipe the rims with a cloth, remove air bubbles, and place the lids on the jars.
- Process pints for 20 minutes and quarts for 25 minutes. Adjust for altitude as needed.

Red hot cinnamon candies have been 1 of my favorite ingredients since my childhood & SusieQusie can tell you that pears have also been favored in recent yrs. This is the 2nd of 2 recipes I've entered that feature cinnamon candies & my source is eatcannedpears.com. (Time does not include time for sauce to cool)

Steps:
- In a med saucepan, combine sugar, water & candies. Bring mixture to a boil, stirring constantly. Reduce heat to med & boil mixture for 10 min, stirring occ.
- Remove from heat & cool at least 20 min b4 using (or cool, cover & refrigerate to store).
- To Assemble Sundaes: Scoop ice cream into 6 dessert dishes & spoon sliced pears over ea sundae. Spoon cinnamon sauce over ice cream & sprinkle w/more cinnamon candies. Serve immediately & store any leftover sauce in refrigerator.
- NOTE: W/the combined sweetness of the canned pears, cinnamon candies & ice cream used for the sundaes -- I would be inclined to reduce the sugar amt in the sauce to 1/2 cup.

POMEGRANATE PEAR SUNDAES

- 1. In a large saucepan, bring the juice, sugar, cinnamon sticks, and cloves to a boil. Add the pears and reduce the heat to simmer until tender, about 10 minutes.
- 2. Transfer the pears to a serving dish and boil the pomegranate juice until syrupy and reduced to ½ cup, about 10 minutes. Discard the spices; let the syrup cool slightly.
- 3. Arrange 1 pear half and 1 ice cream scoop in each serving dish. Drizzle the syrup on top and serve immediately.
- Tip: The pears and syrup can be refrigerated in an airtight container for up to 2 days before serving with ice cream.

- Bring the sugar and water to a boil and turn down heat, leaving simmering on the stove top. Peel and core pears. Slice into eight wedges. In 7 wide mouth pint jars, add cinnamon red hot candies - use according to your liking. I use about 12 candies per jar. Pack jars completely full with pear wedges, leaving 1/2 inch at top of jars empty. Fill jars with simple syrup. Place jars in a hot water bath. Bring to a boil. Start timing and boil for 20 minutes. Turn off heat and let sit for 10 minutes. Remove jars and sit on counter. Make sure each jar has sealed. If there is no seal, keep unsealed jars in fridge for up to two weeks before using.

- Peel, halve, core, and cut pears into wedges, placing wedges in an ascorbic acid solution as you slice them to prevent browning.
- For syrup, in a 6- to 8-quart heavy pot combine the water and sugar. Cook and stir over medium heat until sugar is dissolved. Drain pears; add pears to syrup in pot. Return to boiling; reduce heat. Simmer, uncovered, about 4 minutes or until pears are nearly tender, stirring occasionally.
- Place 1 cinnamon stick, 1 tablespoon ginger, and 2 teaspoons cinnamon candies in each of six hot sterilized pint canning jars. Ladle hot pears and syrup into jars with spices, leaving a 1/2-inch headspace (there will be syrup left over). Wipe jar rims; adjust lids and screw bands.
- Process filled jars in a boiling-water canner for 20 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.
