It's such an amazing color and the cinnamon will be so good in the apple butter.

Number Of Ingredients 4

1/2 Bushel (24 lbs) Apples of your choice (we particularly like Gala or Jonathan)
2 1/2 cups Red Hot Candies
2 cups white sugar
1 1/2 cups water or apple juice

Steps:

  • Peel, core, and slice the apples. Place in a large, heavy-bottomed, pan. Add the water or apple juice and cook on medium heat (with a lid) for approximately 2 hours, or until the apples are soft and start to fall apart.
  • Add the sugar and stir. Continue to cook for another 30 minutes. Add the Red Hot Candies and stir to dissolve and incorporate.
  • At this point you can use a stick blender (or a regular blender) to smooth it out if it's still a bit chunky.
  • This is also when you decide if it is thick enough. If it is not thick enough, remove the lid and continue to cook until you reach the desired consistency.
  • While it is still hot, ladle into hot, sterilized jars. Process in boiling water canner. 5 minutes for half pints and pints, 10 minutes for quarts (as per USDA recommendations).
  • Yield will vary based on how thick you want the consistency.

This can be made in the crockpot or on the stove.The stove is quicker, but you really need to watch closely for burning. You can use fresh apples if available, or use canned applesauce. If using fresh apples you'll need to peel,core and cook the apples until soft, then process in a food processor for a few minutes. The red hots give it a little kick.

2 1/2 cups sugar
1/4 teaspoon apple pie spice (or allspice)
1/4 teaspoon nutmeg
1 1/2 teaspoons cinnamon
2 ounces red-hot candies

Steps:

  • Combine ingredients in a crockpot.
  • Cook on high about 12-18 hours.
  • Sometimes it takes longer, depending on thickness of the applesauce.
  • Cook until it turn dark brown and thickens.
  • It can be stored in the refrigerator or canned in a water bath for 20 minute.

Since retiring, I have more time to tend to our 75 apple trees and to experiment in the kitchen. I came up with this old-fashioned apple butter after some trial and error. The red-hot candies make it unique.-Bill Elliott, Urbana, Missouri

15 pounds early-season apples (Gala, Jonathan and/or Cortland), peeled and quartered
3/4 cup cider vinegar
5-1/3 cups packed brown sugar
4 cups sugar
2 tablespoons ground cinnamon
1 teaspoon salt
1 teaspoon cinnamon extract
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 cup red-hot candies
1 cup boiling water

Steps:

  • In a stockpot, combine apples and vinegar; bring to a boil. Reduce heat; simmer, uncovered, 30-40 minutes or until tender. Remove from heat; cool slightly. Process in batches in a food processor until blended. Return all to pan., Add brown sugar, sugar, cinnamon, salt, extract, cloves and allspice. Dissolve red-hots in boiling water; stir into apple mixture., Bring to a boil. Reduce heat; simmer, uncovered, 2 hours or until mixture reaches a thick, spreadable consistency. , Remove from heat. Carefully ladle hot mixture into eight hot sterilized 1-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

9 c. cooked apples (about 18)
6 c. sugar
1/3 c. vinegar
1/8 tsp. cloves
1/4 tsp.cinnamon
1/2 c. Red Hots candy (be sure to get the Red Hots brand!..they come in a box at Walgreens and Walmart.)

Steps:

  • Wash, pare, quarter and core apples. Add a small amount of water; cover and cook slowly until tender. Drain off any water. Chop with stick blender. Add sugar, vinegar, spices, and red hots. Bring to a boil; let boil 4 or 5 minutes. Ladle into hot jars - remove air bubbles - and process in boiling water bath for 10 minutes. Makes 6 pints.

- 10 lbs tart red cooking apples, washed, cored, and cut into wedges
- 4 to 5 cup sugar

  • Special tools: large, heavy-bottomed pan, sieve In a large, heavy-bottomed pan (such as cast iron), bring the cider to a boil. Cook it down to 2 1/2 cups. Add apples and simmer until they are mushy and no longer watery, about 2 hours. Push apple mixture through a sieve into a large bowl, removing any apple skin and lumps. Measure the apple mixture in cups and put back in the pot. For every 1 cup of pulp, add 1/2 cup sugar. Then, add ground cinnamon and candies. Cook uncovered on medium heat for 6 to 8 hours, stirring occasionally, until mixture becomes thick. The apple butter should be a reddish-brown color.
