Round steak simmered in ketchup and onions makes a great gravy to spoon over mashed potatoes. This was a family favorite when I was a kid.

1 cup all-purpose flour
1 ½ teaspoons salt
1 (1 1/2 pound) round steak, cut into serving-size pieces
1 tablespoon vegetable oil, or as needed
1 (14 ounce) bottle ketchup
1 onion, chopped
2 cups warm water

Steps:

  • Combine the flour and salt in a bowl. Gently press the steak into the flour mixture to coat and shake off the excess flour.
  • Heat the vegetable oil in a large skillet over medium-high heat. Cook the beef until brown on all sides, 5 to 7 minutes. Remove beef from skillet and drain excess oil. Stir the ketchup, onion, and water into the skillet, then add the meat. Reduce heat to medium-low. Cover and simmer until tender, about 1 hour.

CHICKEN FINGERS WITH RED EYE KETCHUP



Chicken Fingers with Red Eye Ketchup image

Kids will love this dinner, which includes all their favorites--chicken fingers, fries and ketchup.

1.5 pound chicken tenders
1 cup buttermilk
1 teaspoon salt
0.25 teaspoon bottled hot pepper sauce
1 recipe Red Eye Ketchup (see recipe below)
2 tablespoon peanut oil or cooking oil
2 tablespoon snipped fresh cilantro
0.5 teaspoon chipotle chili powder
0.5 ounce frozen french-fried crinkle-cut potatoes
1.25 cup all-purpose flour
1 cup finely chopped peanuts*
0.25 cup snipped fresh cilantro
0.75 teaspoon freshly ground black pepper
1 cup ketchup
2 teaspoon instant coffee crystals
0.125 teaspoon chipotle chili powder

Steps:

  • Place chicken in a large self-sealing plastic bag set in a large bowl. Combine buttermilk, salt, and hot pepper sauce. Pour over chicken in bag. Close bag. Chill in the refrigerator for 1 to 24 hours, turning bag occasionally. Prepare Red Eye Ketchup; cover and chill until serving time.
  • In a large mixing bowl combine the 2 tablespoons peanut oil, 2 tablespoons cilantro, and chipotle chili powder. Add french fries and toss to coat. Spread on a baking sheet in a single layer. Bake according to package directions.
  • Meanwhile, in a shallow dish combine flour, chopped peanuts, the remaining 1/4 cup cilantro, and black pepper. Remove chicken pieces from buttermilk mixture; shaking off excess. Coat chicken with flour mixture a few pieces at a time.
  • In a deep 12-inch cast iron skillet or extra-large deep skillet heat the remaining 2 cups peanut oil over medium heat until a bread cube dropped into the oil browns quickly. Using tongs, carefully add 4 coated chicken tenders to skillet. (Once the chicken has been added, maintain oil temperature at 325 degree F.) Fry chicken in hot oil about 5 minutes or until chicken is no longer pink (170 degree F) and coating is golden brown. Drain on paper towels. Transfer to baking sheet along with fries.
  • Reduce oven to 300 degree F and keep chicken and fries in warm oven while frying remaining chicken. Serve chicken fingers and fries with Red Eye Ketchup. Makes 6 servings. Red Eye Ketchup
  • In a small saucepan combine ketchup, instant coffee crystals, and chipotle chili powder. Cook and stir over medium heat until coffee crystals are dissolved. Cover and chill until serving time.

This is a blend of incredible flavors that combine to make this WONDERFUL sauce. It is meant to be served on any kind of pork, ham or pork roast, as well as being used as a GREAT BBQ sauce for cooking, grilling, or smoking ribs, chicken, etc..

Number Of Ingredients 12

1 tablespoon butter
4 slices bacon (finely chopped)
1/2 medium onion (finely chopped)
2 garlic cloves (minced)
3/4 cup strong black brewed coffee or 3/4 cup espresso
3/4 cup ketchup
1/4 cup Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons molasses
2 tablespoons dark brown sugar
coarse salt, to taste
fresh ground black pepper, to taste

Steps:

  • Melt butter in heavy saucepot over medium heat.
  • Add the bacon, onion and garlic and cook until lightly browned, about 3 minutes.
  • Stir in the coffee, ketchup, Worcestershire sauce, mustard, molasses and brown sugar and allow the mixture to gradually come to a boil.
  • Reduce heat slightly, and allow the sauce to simmer until thick and richly flavored, about 10 to 15 minutes, whisking from time to time.

RED TOMATO KETCHUP

I found this great recipe on a Quebec recipe site. When you have many red tomatoes and want to make something special this is it! You can enjoy this condiment with hamburgers, hot dogs, any meats etc.

6 quarts basket ripe tomatoes
4 onions
8 celery ribs
4 apples
1 red pepper
1 green pepper
1 teaspoon salt
2 tablespoons pickling spices, wrapped in cheesecloth
2 cups vinegar
3/4 cup white sugar
3/4 cup brown sugar

Steps:

  • Blanch and peel tomatoes.
  • Cut them in large chunks.
  • Peel onions and apples.
  • In processor pulse onions, celery, apples and peppers; do not pulverize them--leave them in approx 1/2-inch cubes.
  • In large saucepan, stir everything together except the sugars.
  • Cook medium low heat for 1 hour stirring now and then.
  • Add sugars and continue cooking another 2 hours stirring now and then.
  • Do not cover while cooking your ketchup!
  • Pour into sterilized jars; wipe rim.
  • Cover to seal.

Red eye gravy gets its name from the appearance of the gravy's color. This gravy was originally made from the fat of ham steaks and then most often used as an added component to the ham dish. In this recipe, I will be using ham stock cubes as a substitute for fat drippings as an alternative.

4 ham stock cubes
2 ½ tablespoons instant coffee granules
2 cups water
3 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon ground black pepper

Steps:

  • Dissolve ham stock and coffee granules in water in a large mixing bowl to create a stock.
  • Melt butter in a medium saucepan over medium-high heat; add flour. Cook butter and flour, stirring constantly, until brown, to create a roux, about 5 minutes. Add gravy stock mixture 1/2 cup at a time, stirring constantly, until it resembles the consistency of a gravy, 5 to 7 minutes. Season with black pepper. Remove from heat. Serve warm with meal of choice.
